Collegiate Peaks Beer Company In 2021, we bought a lot in the Two Rivers Neighborhood in Salida, CO with plans to develop and open a tap house & whiskey bar. Estimated open - Sept 2026.

October 1, 2025 - You have seen the logo by now. With my builder’s help, hooking up the electricity with Xcel went smoothly.

September 19, 2025 - A taphouse opening in the neighborhood prior to our opening and getting a liquor license are among many things that give me constant anxiety.

September 18, 2025 - The neighbor resolved their issue so I thought we would move forward only to find out we were waiting for the structural engineer to approve some minor changes beyond my control. Two weeks went by since the last video with a small amount getting done. I am trying to remain patient. We hope we can move forward from this point.

September 5, 2025 - I was feeling really frustrated with the pace of the building. I now know it is going to take longer than 18 months to build, but I have spoken to the bank and should be able to get an extension. I also now know I am over budget.

August 25, 2025 - Delayed due to my neighbor’s mistake which infringed his shared wall onto our property. It caused a 1-month delay by the time they remedied the situation.

July 21, 2025 - Our building is on the right. The concrete is poured and steel support beams are in place. Moving forward…slowly.

July 18, 2025 - slow progress is being made. I am fighting rising costs on almost every aspect of the build.
