Collegiate Peaks Beer Company In 2021, we bought a lot in the Two Rivers Neighborhood in Salida, CO with plans to develop and open a tap house & whiskey bar. Estimated open - Sept 2026.

September 3, 2026 - A quick tour of the inside of the tap house.

August 22, 2026 - We spent the day working on the liquor license from affidavits, petitions, to a stop at the county jail to get fingerprinted.

August 14, 2026 - I am starting to move forward with a lot of the administrative and business items needed to open. The drywall should start going up within the next week!

August 12, 2026 - An updated look both outside and inside. Lots of work getting done!

August 4, 2026 - After documenting our journey for the last 5 years, the videos are finally caught up to the present day. A couple of updates - I contacted Salida to start the liquor license process and received a disappointing finish date of mid-November from our builder.

July 20, 2026 - Just had a meeting with my build team. I am resigned that this is going to be at least a 20 month build. Looks like a mid October to mid November finish date which may mean a December opening.

July 17, 2026 - The project was stagnant for the last month. I was trying to make decisions to move forward regarding the facade, signage, and design, but I couldn’t get timely responses.
