Paul, 11Wells is proud to be part of the revitalization of the Payne Avenue Corridor along with our other great neighbors Ward 6 restaurant, Ace Hardware, Flat Earth Brewery, and Urban Organics. And, yes, there are 11 wells on site, the 11th of which will be the water source of our spirits. You may have heard of us before under the name Mill City Distillery, but we have renamed our distillery 11We

lls to be true to our St. Paul roots.

11Wells will be found in the old Blacksmith and Pipe Shop buildings on the vast Hamm's site. These buildings will be home to our production facility, and in the future, a tasting room and gift shop. If the winds shift in our direction we may even have a bar or restaurant on site to compliment our hand-crafted spirits. As in any business, a good location is just part of the equation, because no distillery happens without people. In this case we are lucky to have a full team of friends, family and even future customers that have all helped us get this endeavor started. In addition to a great team of friends, we (Bob & Lee) bring a third key component - passion. We each had the separate idea and goal to open a distillery, and it wasn't until a good friend connected us that we decided to join forces, as two hands are definitely better than one when opening a distillery. The extensive background research that we both have done, including visiting more than 40 distilleries, can now be brought together at 11Wells. We each bring skills from our previous lives and experiences to this project. Bob has not only years of business analysis experience to ensure that 11Wells will be around for years to come but also a degree in microbiology, a skill at the heart of distilling. Knowing how to both frustrate and make yeast happy and grow is the key to unlocking yield and flavors. Lee brings a creative eye to design and marketing along with a wide knowledge of herbs and spices from time spent traveling abroad. He is also an avid mixologist who has created his own line of cocktail bitters, tinctures, salts and other cocktail curatives, which you may have seen around town - Dashfire Bitters. Creating outstanding flavors from botanicals are part of our passion and will inject an excitement into 11Wells spirits.

Hello friends,

We’ve received a lot of questions about the transition of this space, and we want to be transparent as we move into this next chapter. The business formerly known as 11 Wells Distillery, along with the building itself, was purchased by our team last year. The previous owners are no longer involved in the concept or operations, and everything happening here now reflects our new, all-female, ownership and vision.

While we weren’t part of the former company’s direction or practices, we stepped into this building with care and respect for its history. Our goal is to honor what came before while creating something fresh, intentional, and rooted in community.

As part of this transition, we’ll be shifting all updates to our new Voliere Spirits and CrowBar social channels. Going forward, this page will no longer be active. We’d love for you to follow us there and be part of the journey.

And speaking of new beginnings—our cocktail bar, CrowBar, officially opens tomorrow (Black Friday) at 4 PM. We can’t wait to welcome you in for the first pour.

Something new is taking flight in the former home of 11 Wells.

Introducing Voliere—an all-women-owned distillery rooted in care, creativity, and the spirit of the East Side. While this is a completely new venture with new ownership, it lives in the same beloved space, just across from Saint Paul Brewing.

Our first spirits will debut soon at CrowBar, a limited-time pop-up tucked inside the historic Hamm’s blacksmith shop. Crafted for the service industry and those who remember the bars that came before, CrowBar is a place for stories, snacks, and nostalgic cocktails made with intention.

Voliere means aviary—a space for flight, for gathering, and for rebuilding. Just like the East Side itself, constantly reshaped by community, culture, and resilience.

They deliver a lively, inspiring blend of originals and covers in their own unique style. Their music is down-home and earthy from the heart and soul. Grab a craft cocktail and check out their performance! We'll also have the Comfort Smash Foods food truck set up on the west patio from open 'til close with burgers, gyros, cheese steaks, chicken sandwiches, and more!

Join us at 11 Wells Spirits for a special Father's Day edition of The Savor Sunday's Social Pop Up! We're open from 11AM to 7PM with double up specials, delicious fusion cuisine from High Society Eats, board games, a spades tournament, video games, FREE distillery tours, and more!
