“In 2000, Sasha Petraske opened Milk & Honey in New York City. His long-time friend T.J. Siegal invested in the bar and also bartended. According to Robert Simonson, author of several cocktail books, Siegal knew they had a very rich honey syrup on hand. So one night in the bar’s early years, he requested a Whiskey Sour made with the syrup.

“The Sour is thought to be a pedestrian cocktail,” Simonson says. “You wouldn’t think such a simple change would be so important, but everyone who had this drink raved about it. The syrup dressed it up and gave it a more luxurious mouthfeel.”

The Gold Rush soon became a standard not only at Milk & Honey but at bars worldwide. “So many modern cocktails are a little difficult to make because you need a special ingredient from the liquor store or to create something from scratch,” Simonson says. “But anybody can make honey syrup, so the Gold Rush is easy to replicate.”” - Whiskey Advocate

This is a go-to at home cocktail that anybody can make, it’s boozy, citrusy, earthy, slightly sweet, and that’s why this is a classic Modern Cocktail, and I highly recommend you try it out if you haven’t already!

💰 “Gold Rush” 🥃
Combine ingredients in your shaker
- 2 oz. Maker's Mark Bourbon (or your personal favorite)
- 1 oz. Fresh Lemon Juice
- 0.75 oz. Honey Syrup
- Add ice, shake vigorously, double strain into fresh old fashioned glass, add ice to glass
- Garnish with a Lemon twist and swath (I chose to do a lemon rose 🍋🌹
- Enjoy!

Feeling festive because because of today’s circumstances Miranda and I decided to cook our own Thanksgiving dinner, first time either of us have cooked a full Turkey dinner, sides and all, and MAN! What a success it turned out to be! With our meal, and while doing our shopping for all of the essential food needed for this task, I noticed some apple cider. With our meal I wanted a nice, festive cocktail to pair alongside our food to enjoy. Wanted to grab some brandy at first, but didn’t see anything that really grabbed my eye at the store, I naturally gravitated towards Bourbon! (Personal favorite anyways)

While grabbing fresh herbs for our herb butter, I found some fresh sage and rosemary, grabbed some lemon, another mixer, remembered I have some Dry Vernouth which doesn’t get any use really at home, and bam! The perfect cocktail! Let’s get to the recipe!

Seasonal Spiced Syrup
- 4 cups water
- 3 cups sugar (didn’t want it too sweet because the Apple Cider already has enough sweetness to it)
- Dash Cinnamon, dash ground Clove
- 0.5 oz. Fresh Sage
- 0.5 oz. Fresh Rosemary
- Bring to a boil, reduce to simmer for 10-15 mins to taste
- Strain into pour container

Jamaican Apple Tea
- 4 cups Organic Apple Cider
- 1 cup Jamaican Sweet Tea (I got it from Safeway, delicious, tasted like sweet Hibiscus tea)
- 1.5 oz. Apple Cider Vinegar
- Mix

“Seasoned Greetings”
- 2 oz. Buffalo Trace Bourbon
- 0.5 oz. Dry Vermouth
- 0.75 oz. Fresh Lemon juice
- 0.75 oz. Season Spiced Syrup
- 1.5 oz. Jamaican Apple Tea
- Add ice to tin, shake, double strain into Collin’s glass
- Add ice to glass
- Garnish with 2 Apple Slices, and a sprig of sage

This drink was scary good! Bourbon wasn’t drowned out by the other ingredients, the tart, vinegar flavor paired perfectly with my Jamaican Apple Tea I made, then you pick up the Clove, the Rosemary, and the Sage on the back of the palette! Beautiful, easy cocktail you can make this holiday season, enjoy!

Cocktail story time: Miranda and I were out and about running errands, and we went grocery shopping, got a boat load of food and supplies needed for the house and went into a brief state of awakening that I’m going to start posting more on here with all of my random/cool cocktails I make up, create, and want to share with the world. With that being on my mind, I started with my base: my spirit.

I chose Scotch because it screams warmth, smoke, citrus, vanilla notes which are the epitome of the Winter palette IMO. With that in mind, I was bummed to leave with just my spirit in hand, no fruits were speaking to me, no amaro there, no good cordials/liqueurs that sparked my imagination, leaving me kind of bummed.

It was then, that Miranda and I were leaving the parking lot at a red light on our way home, when we see an older gentleman selling Persimmons and Jujube’s out of his car he had from his house. Then it hit me! All the flavors started making sense and coordinating, we had to grab some! This very nice gentleman, talked to me about persimmons, different varietals of them, how they vary, flavor profiles, etc. I had to grab some!

I’ve never worked with Jujube’s, however... So, I asked him so many questions about what to do with it, how to cook it, and he told me that his wife was Chinese and normally steeps the dried ones in hot water for about 90 mins with a few sliced, pit and all. Leaving a sweet, floral, beautifully light tea!

So I decided to make a few things with these:

Persimmon Demerara Syrup
- 2 Persimmons, sliced, skin on
- 1 1/2 cup Demerara sugar
- 1 1/2 cup Water
- 1 tsp. Ground Clove
- 1 tsp. Ground Ginger
Bring to a boil, and steep for about 20 mins, stir occasionally, strain into container for use.

Jujube Tea
- 10 Jujube’s, dried, sliced, pit also
- 8 cups Water
Bring to a boil, leave on low temp, steep for 45 mins, strain into container for use

Persimmon to Launch 🚀
- 3/4 oz. Persimmon Demerara Syrup
- 3/4 oz. Lemon Juice
- 1 oz. Jujube Tea
- 2 dashes House of Angostura Aromatic bitters
- 2 oz. The Glenlivet 12 Year Double Oak Single Malt Scotch
- Add ice to tin, shake, double strain into coupe glass, enjoy!
