Cocktail story time: Miranda and I were out and about running errands, and we went grocery shopping, got a boat load of food and supplies needed for the house and went into a brief state of awakening that I’m going to start posting more on here with all of my random/cool cocktails I make up, create, and want to share with the world. With that being on my mind, I started with my base: my spirit.
I chose Scotch because it screams warmth, smoke, citrus, vanilla notes which are the epitome of the Winter palette IMO. With that in mind, I was bummed to leave with just my spirit in hand, no fruits were speaking to me, no amaro there, no good cordials/liqueurs that sparked my imagination, leaving me kind of bummed.
It was then, that Miranda and I were leaving the parking lot at a red light on our way home, when we see an older gentleman selling Persimmons and Jujube’s out of his car he had from his house. Then it hit me! All the flavors started making sense and coordinating, we had to grab some! This very nice gentleman, talked to me about persimmons, different varietals of them, how they vary, flavor profiles, etc. I had to grab some!
I’ve never worked with Jujube’s, however... So, I asked him so many questions about what to do with it, how to cook it, and he told me that his wife was Chinese and normally steeps the dried ones in hot water for about 90 mins with a few sliced, pit and all. Leaving a sweet, floral, beautifully light tea!
So I decided to make a few things with these:
Persimmon Demerara Syrup
- 2 Persimmons, sliced, skin on
- 1 1/2 cup Demerara sugar
- 1 1/2 cup Water
- 1 tsp. Ground Clove
- 1 tsp. Ground Ginger
Bring to a boil, and steep for about 20 mins, stir occasionally, strain into container for use.
Jujube Tea
- 10 Jujube’s, dried, sliced, pit also
- 8 cups Water
Bring to a boil, leave on low temp, steep for 45 mins, strain into container for use
Persimmon to Launch 🚀
- 3/4 oz. Persimmon Demerara Syrup
- 3/4 oz. Lemon Juice
- 1 oz. Jujube Tea
- 2 dashes House of Angostura Aromatic bitters
- 2 oz. The Glenlivet 12 Year Double Oak Single Malt Scotch
- Add ice to tin, shake, double strain into coupe glass, enjoy!
