One more week of lunch. For now.🫶

After this Friday, September 11, Chuo will be saying goodbye to lunch service as we turn our attention toward what’s next.

We’ve loved spending the middle of the day with you, and while lunch may make its way back someday, there’s plenty to look forward to in the meantime!

A new menu is on the way, along with a few other things we’ve been working on behind the scenes.

Until then, join us for lunch this week!

Tuesday–Friday | 11 AM–1:30 PM
Final lunch service: Friday, September 11

You know a martini. But maybe not this one.🍸

Shaun builds the Umami Martini with Grey Whale Gin, shiitake-kombu sake, dry vermouth and umami tincture, finished with pickled sea beans.

Savory, boozy and elegant, with layers of umami woven into every sip.

A classic, done the Chuo way.

The fish may change. The intention doesn’t.

Once it reaches the counter, each piece is approached a little differently, from the cut to the finishing touches, based on what allows that fish to shine.

It’s where sourcing meets craft, and where the nigiri story comes together.

Crafted at Chuo | Episode 2, Part 2

Consider Darwin’s production commentary part of the Crafted at Chuo experience. Featuring his signature “cut” while we are, in fact, still rolling.

Some things are better over fire.

Chuo’s bichotan skewers bring together shish*to peppers, shiitake mushrooms and shallots with your choice of wagyu, chicken thigh or pork belly, grilled over Japanese bichotan charcoal and finished with robata sauce and chimichurri.

Smoky, savory and built one skewer at a time.

A margarita, reimagined.

At Chuo, even the familiar gets a different perspective. Thoughtfully crafted, layered with unexpected flavor, and built with the same attention to detail that goes into everything behind our bar.

Watch Shaun bring one of our favorites to life.

Behind every great cocktail is someone who cares about the experience just as much as the ingredients.

The Five-Spice Manhattan is Chuo’s take on a classic, bringing together Suntory Toki, rye, Cocchi di Torino vermouth, and Chuo’s house five-spice bitters for a balanced cocktail with warm spice and depth.

If classic cocktails are your style, Austin also happens to make a mean Old Fashioned.

Pull up a seat, ask for a recommendation, and stay for the conversation.🫶

Before there’s nigiri, there’s the fish.

With roots in Yokosuka, Japan, Darwin believes every piece starts with sourcing the freshest fish possible from around the world. Rather than chasing consistency, he embraces change, allowing the menu to evolve with what’s in season, what’s exceptional, and what’s worth sharing.

It’s all part of the Chuo experience.

Part 2 coming soon.
