From the Rochester Sun on May 26, 1938, when Memorial Day was called Decoration Day. There was a time when we malted our own barley using the floor malt system, which was how breweries and distilleries used to malt before the Industrial Revolution. It was a *massively* labor-intensive process. Barley would first be steeped in vats to hydrate it. Then it would be moved to a large floor and spread into a layer about 6 inches deep to germinate. Once here, it would need to be turned over twice a day, 7 days a week, to keep it properly oxygenated, to dissipate heat, and to keep rootlets from tangling the malt into an unmanageable mat. At the proper germination stage, the green malt would be transferred to a kiln to dry much the way it does today (but way more slowly). We did this at our malt house in Sodus, NY. Hard work = good beer. (thanks to beerandbrewing.com for the floor malting info).
