I just want to speak about certain issues... The fish market is incredibly volatile right now. Cod is up. Perch is hard to find, and if your favorite establishment has it, there is a reason. Walleye is spotty...and I can especially say that I have been continuously fighting with my purveyors about the product. Some times it helps, but how can you tell a Canadian fishing company that their products are not consistent. So for all you that cant have the perfect walleye, I am very sorry...I am on the verge of stopping the baby walleye all together. Thank you for your threats...By the way, most of us restaurant owners really care and try hard to keep you happy, despite your selfishness.
