Why are our moules frites so good?
Because we use mussels from Pemaquid Mussel Farm in Maine.

Rope-grown in the open ocean, harvested to order, and prized for being meatier, cleaner, fresher, and more flavorful. Grit-free, beautiful in the shell, and raised with next-generation sustainable practices, these are the kind of mussels that make all the difference.

Paired with crisp fries and a glass of w**e, this is one of our favorite ways to celebrate great seafood.

We’ve taken a classic French technique, slow-cooking the pork shoulder confit-style until it is incredibly rich and fork-tender and paired it with a vibrant, glossy glaze made from Dijon mustard and sweet blackcurrant. It is the ultimate crossover of French culinary tradition and the sweet, tangy soul of an American-style BBQ glaze.
