Agave Blue opened in Prairieville, LA on November 27, 2015, and it is run by husband and wife duo Stephanie and Sergio Rubio. Being partners in other restaurants, we also wanted to open our own concept so that we could be 100% ourselves, from our food down to the décor. We have put our heart and soul into this entire place, which we consider a family restaurant because you will often see our children around or helping us out as well. We want parents to feel comfortable coming here with their families as well, as they will be welcomed by our family.

It is with heavy hearts that we share that our beloved Pops received his angel wings! 🤍🪽

Gerald Joseph Maronge Jr. was Stephanie’s father, but to so many of us, he was also a very special part of the Agave Blue family. He loved being here — greeting our guests, walking them to their tables, sharing a smile, and simply being part of the joy and fellowship that filled our restaurant.

If you had the pleasure of being welcomed by Pops, you know just how special his presence was. Being surrounded by people brought him so much happiness, and we feel incredibly blessed that Agave Blue could be a place that brought him such joy.

Our hearts are with Stephanie, Sergio, and their family as we remember a wonderful father, a familiar smiling face, and a man who will forever be part of the heart of Agave Blue.

Rest peacefully, Pops. We will miss you more than words can say, and we will always be grateful for the love and warmth you shared with all of us! 🤍
