Garbanzo beans, aka chickpeas, are a legume originating in the middle east. Most commonly associated with hummus, our chefs use them in their fresh (green) and dried (tan) forms for our merguez sausage dish.

Now on the menu: Croquetas de Pollo. Classic croquetas are mainly composed of a thick béchamel and the main ingredient, which is then breaded and fried. They can contain anything, from bacalao to jamon. In this case, we cook whole chickens in a flavorful broth, then pull the meat and fold it into the base.
