I was born and raised in Los Angeles, California, growing up in a predominantly Latino community. Our community kitchen at home was always filled with an intense aroma of home cooked Latino meals, the music of an acoustic guitar, dancing, and singing. Imagine me amongst 35 Latino family members; my father and I being the only white boys around. My Godfather, Richard Borquez, carried on the family
tradition of Latino cuisine through a chain of restaurants surrounding the Los Angeles area, and from there my culinary passion soared. I moved to Sonoma County in 1985, and throughout the following years in the restaurant industry, discovered my flair for good food and hospitality. I started off as a busser/dishwasher at a local staple by the name of The Last Great Hiding Place. I then transitioned to a small town called Duncans Mills, where I was a lead coffee roaster for a small business called Gold Coast Coffee. There I was introduced to the dynamics of pairing wine and food, and mastered the art of making an exceptional cup of custom roasted coffee, thanks to my long-time friend, Patrick Jennings. My mentor for all things “off the grill and onto the plate” will always be my father, Don Soberg, who inspired me at a young age that the way to a person’s soul is through food, family, and entertainment. Being the co-owner and operator of the Waterline Bar and Grill on the scenic Russian River was a major attribute to my knowledge and know how for the back and front of house management, and provided a free education of the restaurant world. Life in Sonoma County offers so many rich flavors and wholesome compliments to a fine meal and a colorful life. Besides the backdrop of a beautiful landscape and micro climate, ingredients and fresh, sustainable food is at your fingertips. Soul on a Roll was, and still is, created to carry on the long family tradition of fresh, delicious food, and a way to make people feel right at home. My mission is to use local farmland, sustainable gardening, and fresh meats to fulfill the dream of great food, warm hospitality, and all around fun. No big labels, but just the will and passion to bring the great, hot grilled and iceberg chilled grinds to the minds and the masses.
