It started as a love letter to the little treats we bring each other before service. Now it’s our excuse to share that same feeling with our guests—just with alcohol.

The result gets surprisingly close. Bright peach, soft florals, and that unmistakable candy-shop nostalgia—without the sugar overload. It has the airy, playful character of the peach ring garnish while staying crisp and restrained.

A milk punch gives it a silky body, while sweet tea, vinegar, bitters, and a touch of saline keep everything balanced with just enough tannin and acidity to keep you coming back for another sip.

75 Ninja vs. 1 Karate Man

The goal here wasn’t balance—it was to cram as much mango into one cocktail as possible.

It starts with seasonal Alphonso mangoes imported from India, prized for their intensely floral aroma and rich sweetness. The Japanese whisky is infused with dehydrated mango using the Justino method, layering concentrated fruit into every sip without burying the whisky itself.

The syrup begins as clarified Alphonso mango juice. Instead of regular sugar, it’s sweetened with a blend of glucose and sucrose to preserve the fresh, vibrant character of the fruit and let the mango stay front and center.

Blanc vermouth brings just enough structure to keep everything in line, while annatto gives the drink its unmistakable golden glow. The finished cocktail is then force carbonated, lifting the aromas and giving the dense mango flavors a bright, crisp finish.

Because Alphonso mango season is short, so is this cocktail. Once this year’s fruit is gone, 75 Ninja vs. 1 Karate Man disappears with it.
