It was a perfect day for some smoke and fire, along with masterclass-level barbecue education as the Pensacola Eggfest, presented by PenAir Credit Union its Pitmaster Smoke School today.
Headlining the event was BBQ World Champion Moe Cason barbecue , who brought his larger-than-life personality and championship-level skills to Pensacola for a hands-on class with barbecue enthusiasts and aspiring pitmasters.
Cason, known nationwide for his bold flavors and competition success, shared professional techniques, flavor strategies, and competition secrets developed over years on the BBQ circuit.
Participants gathered around the grills as he walked them through the art and science of cooking over live fire, offering tips that ranged from smoke management to building award-winning flavor profiles.
The class comes during a busy season for Cason, who continues to grow his national presence in the barbecue world. He is currently working on two new television shows and traveling internationally to demonstrate and teach barbecue techniques.
Most recently, Cason returned from the Bear and Burton Invitational in Key West and the Open Fire Food Festival hosted by Steve Harvey in Doha, Qatar, where he showcased American barbecue on the global stage.
The Pensacola Eggfest team also played a key role in the day’s success, closing out the training by sharing their expertise and passion for live-fire cooking while guiding participants through techniques for tri-tip, hanger steak, and picanha on the Green Egg.
For those who attended, the Pitmaster Smoke School was more than a cooking class; it was an opportunity to learn directly from one of the most respected names in barbecue and to experience the craft, culture, and camaraderie that make great BBQ so special.

It was a fundraiser for local charities. As of 2026, Pensacola Eggfest has given over 1,040,000 to Escambia and Santa Rosa non-profits since 2013.
