Our dough starts with intention.
We use zero bleach, zero bromate, and zero glyphosate....because what goes into our flour matters just as much as what comes out of the oven.

Instead, we work with a carefully selected blend of six organically grown Italian grains, milled and combined to create a flour that’s alive with character, strength, and flavor. These are not mass produced commodity products that one can find on a supermarket shelf.

That flour meets our 20-year-old sourdough starter, fermenting slowly to develop depth, digestibility, and that unmistakable aroma of true craftsmanship.

The result? A pizza that honors the tradition of Napoli.
Our ruota di carro, wide, light, and beautifully expressive, crafted right here in Rockland County.

This isn’t just pizza.
It’s a philosophy. It’s patience. It’s respect for the ingredients, the community and our customers

Everything for us starts with our 20 year old sourdough starter. The same one that brings life to every pizza, every loaf of bread, and yes even our new brick oven biscotti.

Our pasta is made fresh by hand daily, using organic flour imported from Italy. Our dedication to the slow food movement means we make an effort to make as many things fresh in house, and have as many high quality ingredients come from producers in the Hudson Valley.

Behind it all is a team that shows up every day with an insatiable passion for our craft, our culture, and this community.
