Almost ready to bottle our next three ciders!

Testing RS levels in two of the new ciders. Residual Sugar can impact the cider flavor, body, and perceived sweetness. We made some predictions based on apple characteristics and the ciders landed pretty close to where we thought they would. We are getting close to releasing our next three single-varietal ciders!

Our tasting room is open Friday 1-6 pm and Saturday and Sunday 11-5 pm.

SUNDAY: Join us and for a Reparative Salve workshop at our tasting space. This class is lead by farmer and herbalist Charlotte Cooper and she will guide through the basics of two salves using Appalachian herbs and our regeneratively raised pork lard. I personally use multiple salves produced by Charlotte and they are fantastic.

We are bringing THREE new bottles produced by our friends and . They produce small unique batches of wine like us and we are happy to support their work. They both focus on sustainability in grape and wine production and unique approaches to fermentations. They are both versed in viticulture and wine-making and it positions them to create a high-quality bottles.

I expect to see a huge surge in spotted lanternfly populations this year. The eggs have hatched and nymphs on the move.

At this point in their life cycle I have not found any on the apple trees. We will be monitoring if and when they decide to visit the trees and which varieties they prefer. We will share notes from the field.

In the meantime our next three cider have finished their initial fermentations and we will continue to work on the ciders over the next few weeks.

We are running low on our Ashmead Kernel 2024 cider.

This weekend our limited Winesap bottles will return to the tasting room. We are very low on this pet nat style cider. And speaking of this cider we have a fun announcement to share tomorrow!

This year we are hosting young musicians the last Sunday of every month from April through October! Every month will feature two of the area’s incredibly talented and entertaining artists.

We are kicking off the season at 2:00 pm with Natalie Williams Music and Gianna Russo wraps it up at 3:30!!

This fall we planted an additional row of trees and replaced a few Winesap trees that didn’t make it through the drought the last two summers.

The new row contains 15 Franklin Cider Trees and they did really well this winter.

While we are still experimenting with the best flexible perimeter fencing, I’m starting to think an our guardian dog might be the best option.

We will be decreasing chicken production this summer so he should be able to watch the orchard and the chickens….

In the mean time we have a new batch of cider fermenting in the barrels for our first 2025 release!
