Before any of our barrel cocktails make it to the menu, they spend at least 40 days resting in oak.

That process takes a lot of the heat and alcoholic burn off the cocktail, smoothing out harsh flavors as the drink interacts with the wood and oxygen. It brings forward the flavors of the original ingredients for a much richer, more balanced and nuanced experience.
