Trivia for your next toast: champagne was considered a defect for about a hundred years.

Cold winters stalled fermentation. In spring the yeast restarted inside sealed bottles and the pressure had nowhere to go — bottles exploded in the cellars, and workers wore iron masks to walk through them. They called it the devil's wine.

The English were the ones who liked it on purpose. And Dom Perignon, the monk everyone credits with inventing it, spent his career trying to get the bubbles out. That famous 'tasting the stars' line was written by an advertiser almost 200 years after he died.

A little history from behind the bar: in 1806, a New York newspaper printed the very first definition of a 'cocktail' — spirits, sugar, water, and bitters. That's the whole recipe, and it's exactly what an Old Fashioned still is 220 years later. When bartenders of the 1880s got too fancy, purists ordered theirs 'the old-fashioned way,' and the name never left.

Unpopular opinion, and I say this as the guy you'd be paying for it — an open bar is usually a waste of money.

Not because your guests don't drink. Because unlimited doesn't make anyone drink more than they were already going to. Most people have four or five and go home. All "unlimited" does is remove the ceiling on your bill.

Same 120 guests, same bar, same night. One version lets you keep whatever nobody drank.

Buy the drinks your guests actually order. Happy to run the math on your guest count and show you the difference.

How much alcohol do you actually need for 120 wedding guests?

About 720 drinks. Roughly half cocktails, a third wine, the rest beer. Plus a pound and a half of ice per person — double that in a Florida summer.

What's holding you back from booking a bar for your wedding?

⏳ You keep saying you'll sort drinks out later. Later is three weeks out with every good bar already booked.

😬 You were going to have your cousin do it. He'll miss the toast, the photos, and half the ceremony — and he didn't come to work.

Here's the part nobody thinks about until it's too late: somebody has to pour the drinks while you're getting married. If that somebody is you, or your mom, or your maid of honor, then one of the people who loves you most spends your reception behind a cooler instead of in the photos.

That's the whole job. You get to be a guest at your own wedding.

Here's something that catches couples off guard when they're planning a wedding bar: mocktails actually outsell cocktails at most events.

That sounds backward, right? But think about it—there's always someone who doesn't drink. A designated driver. A pregnant guest. Someone on meds. When you have 100 people, maybe 60-70 order actual cocktails. The other 30-40? They want something that feels just as premium and intentional.

Most bartenders charge extra for mocktail ingredients because quality ones don't come cheap. That's fair—real juice, quality syrups, fresh garnishes add up fast. But it's worth knowing upfront so there aren't surprises later.

If you're booking a bar for an event, ask about mocktail pricing specifically. You'd be amazed how many couples don't until they're mid-event and someone asks for their third one.
