The man behind the magic ✨

Michael earned his first Michelin star in 2022, a year after launching Soseki Modern Omakase in Orlando, FL. Soseki, a 10 seat multi-course tasting menu, utilizes the best fish from around the world while exploring the amazing bounty Central Florida has to offer.

With over 20+ years in the hospitality industry Michael searched to work for some of the best chefs from Wolfgang Puck, Joel Robuchon, Eric Ripert, Masa Takayama and Jennifer Carroll. Spending time working in leadership roles for amazing brands like Levy Restaurants, MGM Grand, Ritz Carlton, Aria Casino and Culinary Director for a multi unit/ concept brand.

Michael is featured on Morimoto’s Sushi Masters on season 1 on Roku.
Michael now spends his time as the co-host for Diaries of a Master Sushi Chef, a youtube channel with 2M+ subscribers and 86 The Podcast a hospitality based podcast. Michael is also the culinary director for the MM Member’s Club at Ava Winter Park and Mila Miami. 🍱🥂🎉

Miss us?! Well, we’re back and better than ever. Coming to our Downtown Orlando location this month: Sushi Saint🎉

Sushi Saint, a new sushi temaki handroll concept is set to open this fall from Chef Michael Collantes, the owner of Winter Park’s Michelin starred restaurant Soseki Omakase.
Located at Brew Theory in Creative Village, 400 Pittman St, a brewery and distribution operation. Chef Michael will be taking over 2500 square feet of space that will feature a 12-seat bar focused on hand roll sushi, lounge seating and beverage program that will feature low ABV sake based cocktails as well as a curated beverage program by 2023 Michelin’s Sommelier of the year Benjamin Coutts.

Temaki, or hand roll sushi, is a rolled cone style of sushi prepared and handed to the guest to experience the freshest form of sushi. “It is my favorite way to enjoy casual sushi at home with friends. There’s something about getting crispy nori with warm rice. We wanted a less formal experience than what we showcase at a traditional nigiri omakase but with the best parts of getting sushi handed off at the best moment. Sushi Saint will allow us to explore more of an à la carte experience with the same care and thoughtfulness we aim to achieve at Soseki.”

The hand rolls will only be served at the temaki counter where guests can make reservations, but walk-ins will also be welcomed based on availability. The space will feature an additional 30+ seats in our lounge where guests can also experience our chef-inspired sushi-focused menu working with seasonal fish and shellfish from Japan and locally in Florida. Guests can expect on the menu: black garlic sunomono salad, wagyu beef tartare and yes, we will have maki rolls.

The beverage program will be equally thought out and curated as the food. Curating a new program for beverage….
