This Sunday, September 6th, we’re closing our doors for the day to celebrate the Labor Day holiday with family. ❤️ We work hard, we pour w**e, we slice cheese, we make all the delicious things… and every once in a while, we need a little family time, too. 🥂

Some of our friends were able to try this stunner at one of our last Take Flight Taskings, and it was a hit. So to ALL our friends, meet Bel Colle’s Barolo “Simposio” DOCG—a bottle from Piedmont that walks into the room and immediately acts like it owns the place. And honestly? It kind of does.
Made from 100% Nebbiolo, this beauty comes from vineyards around Verduno, La Morra, and Novello in the western part of the Barolo region. Simposio means “meeting” or “gathering,” referring to the coming together of grapes from different vineyards. Basically, a very sophisticated Italian dinner party in a bottle. 🍷
The w**e spends 22–25 days fermenting and macerating, followed by a long maturation in large oak barrels and additional time in bottle. The result is classic Barolo: elegant, structured, complex, and absolutely begging for a good meal.
So… what are we tasting?
🌹 Flowers
🍒 Red berries & ripe cherries
🌶️ A little spice
🖤 Licorice
✨ Velvety tannins + plenty of structure
It’s dry, intense, robust—but beautifully smooth and harmonious. And while Barolo has a reputation for being serious business, this one knows how to have a good time. 😉Pour it alongside red meat, game, rich Italian dishes, or—our personal favorite—a beautifully aged cheese. 🧀 Or skip the food pairing rules entirely. Open the bottle, pour a glass, grab a wedge of something delicious, and let the evening unfold.

Many of you have seen her in the case and we've finally pulled her out!Meet the cheese that likes to get a little tipsy…Ubriaco al Prosecco!
From Treviso in the Veneto region of northern Italy, Ubriaco means “drunk”—and this cow’s milk cheese earns its name honestly. After being made and aged, the cheese is “bathed” in Prosecco DOC, often along with the grape pomace left behind from w**emaking. The w**e gives the rind and cheese its distinctive fruity, floral character while continuing to develop as the cheese matures. 🍇🥂
The result? A firm, compact cheese with a delicate but wonderfully aromatic flavor. Think green apple, ripe pear, fresh fruit, subtle florals, and a gentle w**ey sweetness, balanced by the savory, milky richness of the cheese. It’s fruity without being sweet and sophisticated without being fussy. Basically, everything we love about Italian cheese.
And because this is Italy, there’s a little history behind the technique, too. The tradition of “drunken” cheeses is deeply connected to the Veneto and Treviso countryside, where cheesemakers began experimenting with w**e and grape pomace as part of the aging process. Over time, it became a beloved regional specialty.
We say start with a slice on your charcuterie board—especially alongside prosciutto, fresh or dried fruit, nuts, and a little white w**e jelly. And, of course, pour yourself a glass of Prosecco while you’re at it...or take a wedge home and let it be the star of your next w**e-and-cheese night.

If you needed another reason to fall in love with American artisan cheese, meet Artze from Blakesville Creamery in Port Washington, Wisconsin. And this little beauty has some serious bragging rights: Artze took GOLD and Second Place Best of Show at the 2026 American Cheese Society Judging & Competition, selected from more than 1,600 entries from over 200 creameries across the Americas. 🏆🧀
Artze is a soft-ripened, lactic sheep’s milk cheese made with pasteurized sheep’s milk sourced from Ms. J & Co. in Juda, Wisconsin. The cheese develops a beautifully delicate, wrinkled Geotrichum candidum rind, while the interior becomes rich, creamy, and wonderfully luscious as it ripens. And now add some Piment d’Espelette! This celebrated pepper from the French Basque Country is dusted over the rind, adding a subtle fruity, smoky, gently spicy character to the rich sheep’s milk. It isn't about heat—it’s about complexity. Think creamy, buttery cheese followed by a little pop of pepper and fruit.
And we love the story behind Blakesville Creamery. The farm and creamery are a true Wisconsin farmstead operation, with the creamery making artisan cheeses by hand and focusing on natural ripening rather than shortcuts. Their cheesemaking facility opened in 2020, bringing together traditional cheesemaking techniques and a modern facility.
✨ Fun fact: Artze is a 2-pound wheel, and its name has a beautiful personal connection—the name Artze means “shepherd” and pays tribute to cheesemaker Veronica Pedraza’s Basque heritage.

We’re continuing our National Goat Cheese Month celebration with a beautiful example of fresh American chèvre: Noble Springs Dairy Plain Chèvre.
Located just outside Franklin, Tennessee, Noble Springs Dairy is a family-owned Grade A goat dairy and artisan cheesemaking operation founded by Dustin and Justyne Noble in 2009. Their farm sits among rolling valleys and natural springs, with the land protected by a conservation easement so it will remain farmland for generations.
What makes Noble Springs especially special is their commitment to their goats and their land. The goats graze on the farm's natural forages, which gives the milk—and ultimately the cheese—its distinctive character. The Nobles raise several breeds, including Alpine, Saanen, Toggenburg, and Nubian goats, and every animal has its own name and personality.
Their plain chèvre is made from pasteurized goat's milk, rennet, culture, and sea salt. The milk is cultured and transformed into the soft, fresh cheese that has become Noble Springs' signature product—chèvre makes up the majority of their production.
Fresh, creamy, tangy, and wonderfully clean, this chèvre has the classic bright lemony character of fresh goat cheese with a smooth, spreadable texture. It's mild enough for someone just discovering goat cheese but flavorful enough to keep longtime chèvre lovers coming back.
And its versatility is practically endless: spread it on crusty bread, crumble it over salads, add it to sandwiches, pair it with honey and fruit, or simply put it on a cracker and enjoy.
Fun fact: Noble Springs' goats aren't just part of the farm—they're part of the family. The dairy even offers educational farm tours and baby-goat experiences, giving visitors a behind-the-scenes look at the goats, milking parlor, and cheesemaking process.
