This week was all over the map, albondigas sopa, Asian marinated chicken skewers, cheesy fajitas stuffed chicken breast, smoked pulled pork, taco bakes, Hawaiian macaroni salad, Spanish rice, refried beans and can't forget cheater salsa

Haven't made these in over 20+ years! I remember eating BUÑUELOS as a kid (Mexican version of an elephant ear). So nostalgic as I kneaded the maza, made the bolitas, let them rest, stretched them out, deep fried and finished them by covering them with cinnamon sugar. These were just the trial version. I knew they were good when i came downstairs last night and my picky eater had stuffed himself with 4 and asked if he could please have one more. Love my kids!
