A little bit of Spain, a little bit of Ireland. The Hibernian Highball starts with our own J.J. Corry whiskey, aged in sherry casks so it already carries something from both worlds, brought together with Jameson Black Barrel, DOM Bénédictine, and Giffard Caribbean Pineapple. A splash of Spanish mineral soda ties it all together.

There's no official answer to "what should I order at Swift?" We asked the team anyway. Sausage rolls were mentioned without coordination. The manchego & chorizo pizza got a proper argument made for it, a little heat and a little sweet. And while not technically a food item, the curry sauce can't be missed.
