A long while back, towards the beginning of the SmokeHouse story ... we weren't that good @ BBQ. then one day, Eric Johnson or known by us as Mr.Bobo, came to visit the restaurant.
at the time, we didn't realize how accomplished in the world of BBQ he was. he came, he ate, and said ...

"If you’re going to call yourself a smokehouse, you should probably have a smoker." Johnson sourced a large Texas-made smoker from a manufacturer rare in the Northeast, then helped install it and taught the younger chef how to use it. Hofer said, “He’d be here at 5 o’clock in the morning, showing me how to break down a pig. What customer does that?”

it was true, we didn't have one. we weren't good at BBQ.
Bobo never made us feel like that though. he just kinda made us better. he became our BBQ guy and taught us what we needed. He bacame a true part of our story. never asking for anything in return, just because he loved to do it. it was just who he was.

with his guidance, we turned the sub par BBQ operation around, and really became who we are today.

Bobo will always be a part of our story. in many ways, without his influence, we would not be who we are today. it's possible we never would have made it out of those 'first 5 years'

from customer, to mentor, friend, consultant ... family.
Eric Johnson will always be missed. we are proud to have been a part of his story, as he will always be a part of ours.
