McIntosh: lighter in color; crisper and more acidic.
French: darker in color; full flavored and slightly tannic.
PNW: Pacific Northwest. Mild acid, mild tannins.
Meads: raw honey, fermented to dry. Sessionable.

OUR STYLES & TECHNIQUES
Primary: transforming sugars into alcohol. Our ciders take two weeks. We coferment and infuse during primary.

Secondary: Takes four+ months. Creates fine bubbles & no need for stabilization (nasty chemicals).

Infusions: Infusions sometimes about balancing acid with tannins or creating unique combinations.

Coferments: fermenting together. Four-parts apple (or honey) and one-part other juice from day one.

STOOLS (RED & BLACK) & PATIO FURNITURE FOR SALE
Our annual shed sale is upon us, when I climb up and murmur that something has been in my way for too long and needs to go. We listed this on the dark web (FB Marketplace) so here are those links. I HATE THE ROBOTS
My other yob (teaching) is inundated by robot issues over the last few years and one redeeming fact about the cidery is that it generally is a robot-free zone. Until now.

We had a few tastings this week, which is always a nice distraction (especially considering 90% of you left town for the weekend...or for good?). Diana does most of the talking, I make cheese plates, murmur in the shed to myself about too much furniture, and do a little history walkabout around the building (yes, you may request it if you'd like). One of her icebreakers is to ask how did they find out about us or why they are doing a tasting. Generally they stumble upon us by searching for "cider" or sometimes "mead" and low-and-behold we are the only game in town (activate nervous laughter). Occasionally people just like tastings writ large, although those are rarer now that our rum neighbors are gone (and yes I can still whine about that, thank you very much - they brought in confirmed drinkers to the corner).

One tasting, however, spoke the words that we have never heard before in a non-confrontational mode: "A.I." Diana nodded, expecting one of the usual answers before catching herself - "wait...what?" "Oh yes," this young man (the youth! The youth are lost! We are all lost!) nodded and shrugged in a way that said "no, I am not proud of it, but I do it," like being a smoker in the early 00s (those were the days, right?).

He continued: "I used ChatGPT to plan out the vacation," and you know what, the places the robot lined up...weren't all that bad. Dookie Chase - sure, old school, historic, classic, why not? Seaworthy - fancy place, not as likely going to die like versus discount oysters - why not? Breakfast at Brennans - again, old school, good scene and courtyard, why not? Compère Lapin - fancy, new style, lightly listicle-driven but not overrun, why not? And...Broad Street Cider & Mead? What the *explicative*? We often hear the most embarrassing list from people and this list was...pretty good? Well rounded? Mostly known entities but not wildly expected?

Heck, if the robot overlords look kindly on to our little operation then how bad could it possibly get, right?

THE SAD TRUTH ABOUT SATURDAYS
Dearest reader, we are going to cut Saturdays as of June 1st as our corner of the world gets a little depopulated on the weekends and things get weird over the summer. They may return in the fall. Wednesdays are our favorite (and best, generally) day with our regular crowd, Fridays hold their own 75% of the time, and Mondays are our administrative day, so all good otherwise. We have been open on Saturdays for nine years, so it feels a little weird to us too, but we are good. Enjoy them while you can (as a general rule for life, after all).

Frankly, we coasted off of our former neighbor's rum tours which brought a dozen or two people to our corner most weekends and we happily operated as a waiting room of sorts. Without them it has become a frequent place of "oh are you still open?" (sadly, yes) and "why isn't anyone else here?' (thanks, that means we do not count - bless your heart) which is very poor for our mental health.

Thus, see you on the weekdays. If you yearn for a weekend tipple (or a Thursday jaunt), just schedule a tasting on AirBnB (open for most days if Diana and I are in town, you just have to book at least 24 hours in advance).

As a consolation prize of sorts, we added an about our ciders & meads section with notes about sourcing and techniques to our menus (and added at the end of this email - check it out!).

Thank you to those of you who witnessed true chaos unfold last week: me (Jon) working by myself. Luckily Diana has returned to take her rightful place behind the bar, with me relegated to lurking around the shadowy realm of "between the kegs and shelves," murmuring to myself.

At least, in my quiet desperation, I did come up with an adorable way to present a lagniappe bump of welcome popcorn, European-wine bar style. Only two out of ten who tried it managed to spill it all over themselves, which I do say is a passing grade nowadays.

Some eagle eye readers saw that we floated these changes in a few weeks ago, but now let's put it "above the fold" as the paperpushers used to say. We have streamlined our local club to this:

Simple, crisp, & easy. However, this means that the Duchess Club is put out to pasture. Current Duchess members can still get their 20% off ciders & meads in May, but then starting in June the new pay-as-you-go model reigns supreme. Worry not if you have allotments, but please do try and use them before they expire (six months after purchase).

We have also decided to open up book club to all rational adults who want to pick up their own copy and join us. We may have to skip book club in June, by the way, but we will see how our schedules line up when we all meet on May 20th for Grendel.

He gasped. I gasped. We had a moment, and then shrugged.

Happy Earth Day! 🌎
We’re almost nine years in on our reusable and refillable glass BSC jar program. This is one example when an early business decision actually pans out (plenty are misses!). We’re very proud that our jars are returned and reused an average of 12 times per jar. Our shipping and local club members are a huge part of this statistic. Thank you all for doing your part by drinking cider & mead and returning those jars! This also serves as a gentle nudge to bring back any extra jars and insulated bags that you might have. 😉 Remember the three R’s this Earth Day: Reduce, Reuse, and then Recycle! Cheers!

"I JUST WANT ONE MORE SPLASH..."
We went to a wine bar in Slovenia*, sat behind fellow 'mericans (they at the bar, we at the bench immediately behind - it is a narrow setup), and saw the poor bartender trying to be nice. "We just want to know everything about orange wine - someone told us you would help us." We scoff - clearly these two were sent here as a poison pill by a frienemy. Splash splash. He grunts, she scoffs. "Why do you not like these either?" Oh, there has already been at least one extra round, we think. They gasp - "it is just too, you know, too much?" Bartender's eyes go dark, he reboots and sternly says "I have to go" and walks away to look at other tables, but not until they try to grab another splash out of him.

We audibly chuckle in their direction, as we are both unhinged in public at this point. They turn around. "Oh, we just love wine tastings**," she says, jewelry dangling. We shrug. "Yes, totally, and we are so easy," he says. I immediately blurt out like a spoiled child, "NO, you aren't." Diana, instead of covering, simply says "correct - you have tried at least six things and have ordered nothing. You are not easy at all."

They turn back around, grousing, trying to get the bartender's attention, start asking more questions and this poor guy has eight tables, most outside. Splash splash, again. Splash splash, again. At least ten samples. Finally he says "oh I will get a glass of the...err...first one?" OK, great, says the bartender - and for the lady? "Oh I do not want anything, I will just have some of his."

We have a silent meltdown but hold it together, as explaining to these idiots that they are, in fact, asshats would be too much effort. He drinks his orange wine (I assume thinking it was made of citrus), they pay and leave after one drink.

We naturally trade war stories with the bartender when he catches up and slows down. We begrudgingly advised him to have a flight option to make his life easier (smaller pours and higher price per ounce, naturally). He reveals that Slovenians are sometimes just as clueless (we witnessed the same process with a table outside) but long term tabs versus the "oh I need to leave to do the next next next thing!" types. Although, he thinks out loud, "Americans are"...he hesitates..."I do not want to offend, but, entitled." We laugh and laugh - "oh yes, yes we are, worry not, that is not news to anyone!"

Just remember down and distance (apologies for the football phrase) - if the bartender seems busy, leave them alone and be quick with orders and questions. If they seem bored ("if you have time to lean you have time to clean"), chat them up if they seem amenable.

**Diana is a fan of "tap room" to describe BSC - generally used for breweries - whereas I think "tasting room" as that denotes more winery like vibe. In either case, neither is a perfect fit for a windowless room in the back of a parking lot. Either way, we are not fans of splashes for pours - just get a flight! Splashing for jars, sure, we will climb that ladder any day.
