Flor is f^ing AWESOME

What we're watching here are yeast cells binding together to create aggregates. These in turn encapsulate carbon dioxide bubbles and ride them up to the top of the wine. These aggregates bind together to create this living film that lives on and protects the wine below it.

Dr. Justin McDonough, a Microbiologist currently working as a Genome Editing Specialist, will be leading a talk all about the fascinating world of flor yeast! This event will be held at The Institute Library on Wednesday, October 10 @ 5:30pm.
