The most quiet 10 minutes of the day. Right before anyone gets in. That weather though!

There are a lot of really fun things about operating a restaurant.

Then there are the days when rent, taxes, payroll, and invoices all decide to show up at the same time.

Let’s do the math:

• Food Invoice: $2,513.57
• Payroll: $23,476.26
• Taxes: $18,164.00
• Rent: $4,000.00

One-Day Total: $48,153.83

And that’s before beer, liquor, wine, utilities, repairs, maintenance, upgrades, and all the other fun surprises that come with restaurant ownership.

But at the end of the day, we wouldn’t trade it.

We love this place. We love our team. And most importantly, we love all of you who choose to spend your time here.

The chaos is real. The stress is real. But so is the reward. 🍻
