Picture this: 1983, McAllen, Texas. Sergio and Sandra take a chance and open a Mexican restaurant in a sea of Tex-Mex, built around dishes nobody else was doing. Soft tortilla tacos. Enchiladas Suizas. The Sombrero. The Botana. Forty-plus years later, every one of those dishes is still on the menu.
