Tagliarini Con Maiale: Weekly Pasta Special

Our fresh egg yolk pasta with braised pork belly, zucchini, roasted cherry tomatoes, ricotta & hazelnuts.

Not to brag but this is a good one, guys. It’s savory but lifted and fresh plus it becomes creamy when you mix in the ricotta. Available through next Wednesday, 6/3. See you this weekend, pasta lovers!

One of our staples here at Broders’ Pasta Bar: Tagliarini di Locanda di Lupo AKA the #18. This dish is inspired by a recipe from Locanda del Lupo - once a coaching inn and tavern for traveling merchants, now an iconic restaurant in Soragna, a quaint town in the Province of Parma. Fresh egg yolk pasta, Prosciutto di Parma, truffle cream. Rich, creamy and oh so delicious.

Served on our lunch special or all-day menu...on the patio, in the dining room or to-go!

Pasta Napoletana - this week’s special.

We’re taking casarecce, a scroll shaped Sicilian pasta, and tossing it with a lemony, briny, sauce packed with swordfish, tomatoes, kalamata olives, capers, lemon and white wine. Topped with parsley & crispy garlic.

Available through 5/27! We’re open normal hours through Memorial Day Weekend and would love to serve you some delicious pasta. Buon appetito.

Give a warm Pasta Bar welcome to our new Executive Chef, Nate Mickelson

Born and raised on the Eastside of Saint Paul, Nate has always been smitten with food. From baking with mom and high school kitchen gigs to working doubles at Muffulettas & Kincaid’s - he’s worked his way through countless cuisines and environments.

As a veteran of the Twin Cities dining scene, Chef Nate joins our team with a full roster under his belt. He’s spent time at some legendary spots - Chino Latino (RIP) and Manny’s among them - and he’s also got a sweet spot for ice cream, having had a hand in opening Milkjam, Bebe Zito’s, and Dream Creamery.

But his connection to Broders’ is personal. He has family in the neighborhood, and the Pasta Bar was once a beloved first-date destination. In his first month, Nate has already brought an energy of change and flavor. He’ll be rolling out a new summer menu featuring dishes you’ve never seen before at the Pasta Bar (don’t worry, the classics aren’t going anywhere). He says he’s been getting a feel for not only what pasta Minnesota loves, but what our Southwest MPLS neighbors enjoy. That’s what we like to hear. Next time you’re in, feel free to give your compliments to the chef.

Risotto special featuring wild mushrooms 🍄‍🟫

We are so lucky to be able to highlight these beautiful local mushrooms coming from our friends, Liten Bekk farms out in Goodhue County.

Found in this week’s risotto special: Carnaroli rice with wild mushrooms (king trumpet, black pearl, and snow oyster), shallot, red pepper flakes, chives and a mushroom powder sprinkled on top.

Our friends at Neighborhood Roots are out in our communities doing the good work: operating three Minneapolis Farmers Markets that support over 120 local farmers, makers & creators + providing neighbors with programs & services that put healthy food where it’s needed most!

If you can’t dine with us today, you can support them throughout the year by volunteering or popping by your local Farmers Market (which opens this weekend!)
