On Saturday, May 23, we will welcome our very own back to the dinner series for an evening centered on storytelling, nostalgia, and craft.

Guests may add a pre-service Q&A and champagne toast with the chef.

About Chef Cole Jeanes:

Chef Cole Jeanes is a Memphis-born culinary creative whose passion for cooking is rooted in childhood days spent hunting, fishing, and frying game over wood fires with his late father. After rediscovering his love of cooking in college, he trained at L’Ecole Culinaire and gained experience in noted Memphis kitchens, including Acre and Porcellino’s Craft Butcher. In addition to being a co-founder of the Etowah Collective, Jeanes is one of the owners of renowned local restaurants and .

On Saturday, March 7, we welcome to Memphis for an evening centered on Gulf Coast tradition, seasonality, and craft. Lucas is the Executive Chef at in Houston, a Michelin-recommended restaurant recognized by Texas Monthly, the Houston Chronicle, and Eater.

About Lucas
A Mississippi Gulf Coast native, Lucas McKinney trained under James Beard Award–winning chefs including Chris Shepherd, John Currence, and Vishwesh Bhatt before opening Josephine’s in 2023. His cooking reflects a deep respect for Gulf ingredients, regional agriculture, and the landscapes that shaped his upbringing.

ABOUT ALEX : A Kentucky native and seasoned culinary professional, een47 leads the kitchen at , where he shapes contemporary Italian–inspired fare infused with global flair and a deep reverence for local ingredients.

Green’s early career highlights include helping launch the acclaimed Josephine Estelle in New Orleans, followed by a tenure as Chef de Cuisine at Hog & Hominy in Memphis. In 2021, he returned to Kentucky to oversee culinary operations and dining services at Frontier Nursing University before joining Mileta as Executive Chef in 2023.

ABOUT JON: is the head chef of in Oxford, Mississippi. Raised in Memphis, Davis began cooking professionally while a student at the University of Mississippi. He took his first kitchen job at Boure’ and went on to work in seasonal kitchens in Cape Cod before returning to Oxford where he has held roles at Saint Leo, The Blind Pig, and The Graduate, and presently City Grocery, where he was named head chef in 2024.

Davis sees food as both personal and cultural—an opportunity to evoke memory and emotion, stating, “Whatever I put on a plate, I want it to tell a story. I want there to be some type of component of ‘This is what I feel,’ ‘This is who I am’ …”

He was named 2025 King of Mississippi Seafood and will represent the state at the Great American Seafood Cook-Off in New Orleans. He also won Judges’ Choice at the 2024 Natchez Food & Wine Festival.
