When we're creating cocktails, we aren't trying to make the loudest drink on the menu.
We're chasing balance.
This one starts with smoky mezcal, then layers in Averna, pineapple, vanilla, and fresh lime. Sweet, smoky, tart, and just enough bitterness to keep everything in check.
Finished with a salted rim and torched pineapple because sometimes the garnish should be part of the experience, not just decoration.
