We’ll miss y’all! Chimera’s last day will be Sunday, February 26th. It’s been an incredible pleasure being part of the Louisville beer community and we will always be grateful for the warm welcome. Thank you to our head brewer Shawn Steele for the best beer I’ve ever had, Jeff Hennis for the tireless work and commitment to donate sales from every beer to local nonprofits, and all the friends we’ve made along the way. With kokuto (Japanese dark sugar), anise, clove, fennel, and cinnamon. A surprisingly light body for a high abv quad, the flavors of warm spice and dried fruit will keep you coming back for more. 9.4%
