The 2018 shows the a more restrained style of the estate yet still brings classic Pavie richness, depth, and grandeur. It has a deep purple color as well as a sensational bouquet of crème de cassis, damp earth, to***co, chalk, and lead pencil shavings.
On the palate there is full-bodied richness, incredible purity, a dense, concentrated mid-palate, and a liqueur of rocks-like sense of minerality on the finish.

We’re celebrating judgement day, Thursday the 21st with a special flight of wines and small bites to pair with starting at 5 in the dining room 🍷🍾

Held in Paris May 24, 1976, the “Judgment of Paris,” also known as the “Paris Tasting,” was a formal blind tasting of red and white wines—six California Chardonnays against four white Burgundies & six Cabernet Sauvignons against four red Bordeaux pitting the Old World against the New World.

The tasting was organized by English wine merchant Spurrier and his American business partner Patricia Gallagher, who enlisted nine well-respected French judges for the blind tasting. After results were tallied, surprise turned to shock as two California vintages scored first in their respective groups. The outcome crushed the then widely held belief that only the French could make premium wine and brought significant acclaim to the winning winemakers, their wineries and the Napa Valley. It is regarded as pivotal to the rebirth of the American wine growing and winemaking after the industry’s devastations during Prohibition.

Santa Cruz Mountains, Historic Ridge Monte Bello:

In 1886, high in the Santa Cruz Mountains, the first Monte Bello vineyards were planted, and winery construction begun. A first vintage from the young vines followed in 1892. During Prohibition (1920-1933), the vineyard was not fully maintained; some vines survived into the late 30’s, but by the 1940s they were effectively abandoned. Eight acres of cabernet sauvignon were replanted in 1949. These were the source of the first Ridge Monte Bello (1962) and subsequent vintages until 1974 when younger blocks replanted in the 1960’s were considered for inclusion. Since then, the historic vineyards on the ridge
have gradually been replanted.

The 2019 Vintage is a result of abundant winter rainfall followed by warm spring weather created ideal growing conditions. A long warm summer fully ripened all varietals in early October. During blind tastings, a record forty-one separate lots were assembled to create this vintage of Monte Bello. Structured and opulent!

Our Cellar Gem selection for this week is a 2021 Château Cheval Blanc, “Le Petit Cheval”, White Bordeaux

For more than 10 years, Château Cheval Blanc has challenged itself to be produce a great white wine on its small 6.6 hectares vineyard nestled in the parcels of its elder.

A genuine variation, in white, of the identity of Cheval Blanc, this wine is a blend of some 12 different plots, on clay, sandy and gravelly soils, where 80% sauvignon blanc and 20% sémillon fit perfectly.
