This Sunday, 6/7, join us for a very special sake masterclass with Philip Harper of Tamagawa. UK-born, Philip has been brewing sake in Japan since 1991 (!), and today champions wild yeast fermentation, ancient techniques, and aging sake.

From 4-5pm, Philip will guide us through a tasting of five of his sakes, with a focus on aging and how it impacts the flavor and experience. We’ll have a fresh seasonal bottle, a sake made using a recipe from 1712, and three other flagship brews. Our longtime friend and sake bon vibrant will also be in house, always a treat.

Tomorrow night, a book party (but so much more)

We first met Wyatt 8+ years ago. He was sitting at the bar at tsubaki with his wife, and after some back-and-forth and “how do I know you?”s we realized we had been sitting at neighboring tables the prior night at Bavel. Mainly in the interest of making small talk, I asked him what he did for a living, and he told me he was a photographer. We happened to have a need for a photographer for the restaurant, which I mentioned, and Io a working relationship, and a friendship, were born

Wyatt gets credit for all of the nice photos that show up on any of our instagram feeds, and he has truly chronicled the life of all three restaurants over so many seasons and years. His style is so distinctly his own, and always feels so real and human and rich with emotion. His love for restaurants - and more importantly, the people in them - is palpable, and Wyatt always manages to bring beauty and depth to the small, seemingly insignificant moments that make up a day in our life

And more than anything, he’s a true gem of a human, a total sake enthusiast, and genuinely just a delight to work and collaborate with. We couldn’t ask for a better visual partner

Over those same years that we’ve been working together, Wyatt has also been documenting life at Shirataki sake brewery in Niigata, and has put together a truly special book and video documenting his time with them (The Driver’s Room). We are truly honored to be hosting him, as well as the brewery, tomorrow night for a book launch party (and celebration)

The brewery is bringing sake from Japan, as well as rice from their very own fields for us to cook and roll into onigiri. Wyatt will have copies of both his books to share and for purchase, and some other special treats in store for you all too

Well, maybe not surprising to longtime OTOTO visitors, but our hunch is most people don’t think of sake first when considering a pairing for oysters, or cheese, or a burger. Tomorrow night: MEET THE BREWERS

Sake fest rolls on, and we are so honored to welcome two people responsible for some of our absolute favorite sakes, heavy hitters who are almost always on our list in some form

Takaaki Yamauchi of Huchu Homare (Wataribune!) and Kotaro Saito of Saiya Shuzo (Yuki no Bosha) will be on the floor with us sharing stories and sharing glasses. We’ll have two sakes from each brewery available by the glass, carafe, and bottle, or build a flight to try a bunch! Plus suggested pairings and retail bottles for purchase (get yours signed!)

Next Thursday! Come along on a quick trip to southern Japan, one night only! We’ll be joined for the evening by a very special guest from , our beloved brewery based in Saga prefecture on the island of Kyushu, and champion of flower yeast 🍓🍓🍓

Drop in between 6-8:30 pm for a flight of three Amabuki sakes - strawberry, sunflower, banana - with our guest from the brewery available to guide us through them all. Our chef has put together some truly stellar pairings inspired by Saga cuisine, all available individually or as a tasting set of three 🌻🌻🌻

Here’s a suggestion for something you may enjoy. Japanese-style fried chicken ‘nanban style,’ with sweet and sour sauce, spicy tartar, and a nice spoonful of ikura dappled on top. We’re excited to welcome a very special guest this Sunday, March 1, for our weekly Sake School: Hugo Chan from Masumi, a beloved brewery hailing from the beautiful
city of Suwa in Nagano prefecture, joins us to share all the stories and behind-the-scenes details.

Masumi was one of the first breweries we ever worked with when we opened tsubaki over nine years ago - the ‘Nanago’ was on our opening sake menu! - and they make some of our favorite sakes to share with guests (and enjoy ourselves)

Hugo, together with LA legend ‘Kanpai’ Kerry Tamura, will be with us from 4-5pm to share stories of the brewery together with a guided tasting of four sakes (including the fresh release of seasonal Arabashiri).
