La Cuevita is part of the 1933 Group’s collection of fine establishments, which include Oldfield’s Liquor Room, the Thirsty Crow, the Bigfoot Lodge East, Bigfoot Lodge West and Sassafras Saloon in Hollywood. We love tequila and mezcal and we have a unique collection of both. Our happy hour is from 5pm-10pm every day of the week, including weekends. Double features on the screen and free popcorn !!! Movies start at 9pm

We rush everything. Agave doesn’t. Tequila’s blue agave is quick by comparison, ready in about 6 to 8 years. But the wild agaves mezcal leans on can sit in the ground 25 years or more before they’re ever harvested, storing sugar and patience the whole time.

Every pour is somebody’s waiting, measured in seasons.

Strip an agave down and you get the piña, the core, and it can tip past 100 pounds. A jimador cuts it by hand with a coa, the same way it’s been done for generations. No machine deciding when it’s ready. Just a person who knows the plant.

Nobody adds the smoke. 🔥

That campfire note in your mezcal isn’t a flavoring. It comes from roasting the agave hearts in underground pits, packed with hot rocks and wood and buried for days. The earth does the seasoning. By the time it hits your glass, the smoke is already a memory of the fire it came from.

Tequila is steamed, not roasted, which is why it doesn’t carry the smoke.

Tequila has one agave. Mezcal has dozens. 🌵

Here’s the split. Tequila can legally be made from just one plant, blue Weber agave. Mezcal opens the whole family: espadín, tobalá, tepeztate, and dozens more, each with its own flavor, its own patience, its own region. That’s why no two mezcals taste the same, and why tequila runs a narrower lane.

One rulebook keeps it tight. The other lets the plant do the talking.

All tequila is mezcal. Not all mezcal is tequila.🌵

Here’s the untangle. “Mezcal” originally meant any spirit made from agave, full stop. Tequila is just the branch that blew up: made only from blue agave, mostly around Jalisco, with its own strict rulebook. Mezcal is the bigger family, made from dozens of agave species, most famously around Oaxaca.

Today they’re two separate legal categories, so a bottle is one or the other. But the family tree is real, and it all starts with the same plant.

From here, every card tells you exactly which one is in the glass.
