Q&A WITH MIKE & VICKI - Why is Pizza Dough Fermentation So Important?

There are a lot of different ways to make pizza dough. Some places make it and use it the same day. And you can certainly do that. But here at Little Pops, we do things a little differently.

We start with cold water and let our dough ferment in the cooler for 48 to 72 hours before we use it.

Why? Because that extra time makes a difference.

As the dough ferments, the gluten continues to develop and the dough builds flavor. That's what helps give our pizza crust that great taste and chew you're looking for in a New York-style pizza.

Could we make our dough faster? Sure. But we think giving it that extra time is worth it.

It's one of those little things that makes a big difference in the finished pizza.
