A perfect dish for these early summer days. Meet our hamachi crudo. Sitting in an a light refreshing aquachile made from cucumber, cilantro, a little serrano chili, and a touch of mint and finished with good Spanish olive oil. The hamachi is brushed with a gel made from macerated rhubarb. Giving the fish another layer of flavor.

Lamb ribs from Freedom Run Farms are a labor of love, it’s a three day process. Brined for 24 hours then rubbed the next day in a spice blend of fennel, cumin, coriander, cinnamon, clove and black pepper, wrapped then cured another 24 hours. We then braise them till tender and then glaze them in our pomegranate molasses bbq sauce.
Perfect to enjoy on our patio!

Spring Asparagus Salad, Gribriche, Herbs.

Fresh local asparagus quickly blanched to set color and retain crunchy texture. It’s dressed in good Spanish olive oil, lemon juice, salt, pepper. It’s spooned over the gribriche; think of it as a zesty, herby French egg salad.

Fried artichokes, aerated mornay, herb oil, chive blossoms.
When I was in Florence this winter I had fried artichokes for the first time. Simply dressed with lemon juice and parmigiano. Perfect and delicious.
Here’s our version. Respecting its simplicity but “cheffed” up just a bit. It’s what artichoke dip wishes it was.

Our Fennell Salad has delivered big for this winter and early spring, while we wait for springs bounty. Nestled underneath the basque sheep’s milk cheese is crispy fennel and celery, candied walnuts, everything dressed in a yuzu vinaigrette. Crunchy, juicy, tangy, creamy and just enough sweet from the walnuts and pear for balance and texture.
