Week 3 – The California Roll Wasn’t Born in Japan

But here’s a little surprise…

The California Roll wasn’t actually born in Japan.

Back in the 1960s and 1970s, many Americans weren’t comfortable eating raw fish or seeing dark sheets of seaweed wrapped around their food.

Japanese sushi chefs living in North America wanted to introduce sushi to a new audience.

So they became creative.

They turned the seaweed to the inside.

They added creamy avocado.

Fresh cucumber.

And imitation crab.

The result was something familiar, approachable, and delicious.

The California Roll became a bridge between two cultures.

For many people, it was their very first bite of sushi.

And for countless sushi lovers, it was the beginning of a lifelong adventure.

Week 2 ——🍣 Is Wasabi Really Just About the Heat?

Have you ever mixed all your wasabi into the soy sauce?

You’re definitely not alone.

In fact, millions of people do it every day.

But in Japan, sushi chefs rarely do.

Why?

Because wasabi was never meant to be just “the spicy green paste.”

Long before refrigerators existed, fresh fish was much harder to keep safe.

Japanese cooks discovered that fresh wasabi naturally helped slow the growth of certain bacteria.

That meant it wasn’t only adding flavor—it also played a practical role in protecting the food.
