Harvested from the cold, clean waters of the Hood Canal, Cranberry Creek oysters are known for their plump texture, bright salinity, and crisp finish.

These West Coast oysters offer a crisp, moderate brininess with earthy mineral notes and a slight honeydew melon finish.

In the glass, Le Vaglie Verdicchio delivers vibrant citrus, green apple, white peach, and delicate almond notes, supported by refreshing acidity and a distinctive mineral character. Produced in the renowned Castelli di Jesi zone along Italy’s Adriatic coast, it’s a classic expression of one of Italy’s great seafood wines.

It’s Thursday and that means oyster night! Tonight we’re bringing together two coastal treasures: Boomamoto oysters and Mokoroa Getariako Txakolina.

Boomamoto oysters are raised in the cold, nutrient-rich waters of the East Coast. Tthey offer a balanced brininess with notes of sweet cream, cucumber, and a clean, refreshing finish.

To pair, we’re pouring Mokoroa Getariako Txakolina from Spain’s Basque Coast.

Produced in the Getariako Txakolina appellation overlooking the Bay of Biscay, this vibrant white wine bursts with flavors of green apple, lemon zest, white peach, and fresh herbs. Bright acidity, a subtle natural spritz, and a distinct saline minerality make it one of the world’s great oyster wines.

2020 MUSCADET SÈVRE ET MAINE SUR LIE

Long praised as the ultimate oyster wine—an entirely deserved reputation—this Muscadet is uncommonly full and rich but still sporting the crisp acidity and low alcohol that make it so sessionable.

Lovely notes of honeysuckle and pulpy stone fruits, all while maintaining classic notes of iodine and sea breeze that make this the top choice for this week’s oyster pairing.

We’re pouring it along side the Murder Point oyster, which deliver a full, rich, creamy taste, a hint of butter flavor and a light metallic finish.

We’ll see you tonight!
