Kusshi oysters are Grown on Stellar Bay’s cutting edge oyster farm in Deep Bay, British Columbia, Kusshis are raised in nutrient-rich Pacific Ocean waters, tumbled to strengthen the shell and give it its distinct, smooth appearance. This tumbling process achieves the desired deep, easy to open cup that holds within it the perfectly consistent, plump, firm, and delicious bites of oyster. Umm hmm. We’re pairing them with The Eyrie Vineyards 2024 Chasselas Doré. From The Eyrie website: “our vineyards have never used herbicides , pesticides, tillage or irrigation. We take organic certification as merely the first step, and then we build on it.” This is exactly what we want to hear. This native Swiss Chasselas grape makes a beautiful w**e. Fresh tropical and savory and just 10% alcohol. Perfect huh?

Hello Salty Goodness! Tonight’s oysters are Blue Points from the Atlantic along the Connecticut Coast. We’re pairing them with the Spy Valley Sauvignon Blanc from the Waihopai Valley of Marlborough, New Zealand. Deep in the wilds is the beautiful, untamed land that the Johnson family dared to grow vines. Strongly committed to the land, their focus is on sustainability that will preserve the vineyards for generations to come. Juicy with passion fruit, grapefruit and peach it’s the perfect w**e to cut through the brine. Yum!

Do we have oysters tonight??? Do we ever!!! We’re making up for an oysterless night last week. This week we’ve got three choices! Representing the West Coast we have Cranberry Creek - from the cool waters of South Puget Sound look for honeydew sweetness and a long finish. Next we have coming from Baynes Sound of British Columbia, Chef Creek Oysters with a briny flavor that makes a perfect raw oyster. Lastly, hailing from the East Coast - Chesapeake Best, briny, bright and clean with a mineral finish.

We’re pairing these beauties with Count Karolyi Grüner Veltliner from Dunàntül, Hungary. Expect aromas of apples and apricots, yet well-balanced and dry on the palate. Treat yourself to fresh oysters and crisp Grüner tonight at The Cellar!
