Dr Bone’s Sauce Lab

Dr Bone’s Sauce Lab An artisanal small batch fermented hot sauce company located in Kingston, Pennsylvania. Eventually I will begin the long licensing process.

Big Picture Brew Works is a brewing project by Ted Kerpovich of Aurants Restaurant. This project is in its infancy stage but the overall goal will be to brew fun conceptual beer styles that will be available exclusively at Aurants Restaurant. I wanted to launch this page to chronicle my research and development of these beers and to get some feedback on my ideas. My hope is, in the meantime, that new legislation will be passed in PA creating a more nano brewery friendly license with lower start up costs and output requirements.

We’re showing more love for yellow super hots again today! Pictured here are “Yellow Scotch Brains”, on the left, and “7 Pot Nebru”, on the right. They both max out at around 800,000 Scoville, comparable to Ghost peppers, and are Scotch Bonnet crossbreeds. 💛💛🌶️🔥🔥🔥🔥.

We have a terrifically terrifying label for our newest sauce “Ray’s Ghost”, to share with you today! This mind blowing illustration was done by the one and only Joe Figlerski! Be sure to check out his link, especially if you’re interested in finding a tattoo artist. He has something really special going on in NEPA. The layout and text was done by Jim Mulvey who has done so much great work for us since the very beginning of this venture. Ray’s Ghost combines the super hot heat of ghost peppers, the earthiness of savory herbs along with bourbon barrel smoke and a freight car’s worth of blueberries to smack your palate with extreme flavor! This newest sauce will be available for the first time this Saturday September 12th at the Garden Drive-In Fall Craft Fair from 10 am until 4 pm. We hope to see you there! 🌶️🫐🚂💀🔥🔥🔥🔥.

Today’s pepper Pimenta de Dog (800,000 to 1.2 million Scoville) has gone from green, to purple, to orange, to bright red and is now fully ripe and ready to harvest. We have a truly outside of the box idea for these pups this winter! 🐾🌶️🔥.

We have a beast of a pepper to share with you today! This is the Peach Miasma. With a Scoville level of around 1 million, it’s firmly in the super hot pepper category but its size puts it class by itself. This soft peach colored chili can get to be as big as a tennis ball and is easily the largest super hot that we’ve ever grown. Check it out in a sauce this winter! 🍑👹🌶️🔥🔥🔥🔥

From time to time we’ll be releasing spicier versions of our regular lineup of sauces. For our first variation we’ve made a Ghost pepper version of our normally mild Italian themed sauce “Three Mothers”. The amazing artist Justin Coffee who co-created our mascot “Dr. Barnabas Bone”, illustrated this awesome label and the talented Jim Mulvey created the layout and text. This sauce will be available at our next live event on Saturday September 12th at the Garden Drive-In Fall Craft Fair from 10:00-4:00. 💀💀💀🌶️🔥🔥🔥🔥

We’ve waited quite a while for this pepper to ripen but after about 6 weeks of being fully grown and green it’s finally ready! This is Dragon’s Breath and it comes in at an insane 2.48 million Scoville! It was bred from 7 Pot varieties in the UK by Neal Price in collaboration with Nottingham Trent University, and further cultivated by horticulturist Mike Smith in Wales, which is how it got its name. Once rumored to be “deadly” by the UK press this pepper was actually developed to be an alternative topical anesthetic for people allergic to traditional medical anesthesia. We’re going to mix it with Dragon fruit this winter in an all new sauce to create a double dragon experience not for the faint of heart! 🌶️🐲🐲🔥🔥🔥🔥🔥.

You never know what you’ll get from successfully crossing peppers. One thing is for sure, it takes a minimum of at least 10 generations to create a new stable variety. This cross is between Aji Limon (Lemon Drop) and Sugar Rush Peach to create Sugar Drop Orange. We grew all three this year for different sauces this fall/winter! 🍋+🍑=🍊.

Today’s pepper is a little ray of sunshine on a cloudy day here in NE Pennsylvania. This is the KS Lemon Starburst (225,000 Scoville) created by one of my favorite pepper aficionados Khang Starr. This is a cross between an MOA Scotch Bonnet and a Bahamian Goat Pepper. We’re going to feature this in a sauce this winter. 🍋 🌟🔥
