Wine of the day: Part of our Spanish themed wine club selection this month, it was a clear favorite in last night’s tasting. La Caña Albariño. A textbook expression of Albariño from Rias Biaxas, Spain. Green apple and pear on the nose. High acid white with a great balance of fruit and minerality.

Wine of the day: Saint Jacques Ultreia. Mencía from Bierzo. This cuvée is one of the best quality-to-value reds in all of Spain. Produced by Raúl Pérez, one of Spain’s most respected and influential winemakers. Expect: Red and black cherry, some graphite/mineral notes, light tannins and bright acidity. Very food-friendly and energetic.

🥂 Meet the vibrant and crisp elegance of the 2023 Pommier Chablis from the hands of Isabelle Pommier & Denis Pommier in the heart of Chablis (Burgundy, France). Since 1990 they’ve farmed organically in Poinchy and grown their estate from 2 ha to 16 ha, capturing the purity of the region’s legendary Kimmeridgian soils. 

🍋 On the nose: fresh lemon-zest and green apple with just a whisper of honeysuckle and wet-stone minerality. (Yes: that classic “flinty” Chablis note!) 

🍏 On the palate: crisp and lively, this Chardonnay (100%) delivers lime, white-peach, pear and a chalky finish that makes you reach for another sip. 

🍽 Serving tips: Chill to about 10-11 °C (50-52 °F) to keep that vibrant acidity singing. Pair with something equally bright — think oysters or clams, lightly grilled fish, lemon-butter scallops, or even a fresh goat-cheese tart. For a heartier option: roasted chicken with herbs or shrimp risotto.
