Have to move around some beer today then off to Alamo Draft House for the No Label pro am. Going to be kegging a German Pilsner and American Classic Pilsner after that going to be lagering an American light lager, Bohemian Pilsner, and a Dopplebock.

Finally getting a good taste of the IPAs that were brewed a few weeks ago the experiment with these beers were to brew an IPA with only base malts. IPA 1's grain bill was made up of equal parts pilsner malt and Marris Otter and a little bit of Munich. I think it lacked a little in the body and it had a grainy taste from the pilsner malt the hops used were warrior for bittering and Ahtanum and Cascade for aroma and flavor the hop flavor for this one was like drinking grapefruit juice. IPA 2 was made up of equal parts 2 row and Marris Otter and some munich to round it out. This beer in my opinion tasted better and had better mouth feel the 2 row has a more neutral flavor which I feel fit better for an IPA. The hops I used for number 2 were Apollo for bittering and 4 ounces of Zythos for flavor and aroma. I have never used either of these hops I will definitly give the Apollo another chance because I like the bitterness it give this beer but the Zythos flavor in this beer is muddled I can't really pick out any one flavor from this hop blend and the aroma is lacking as well. All four ounces were added in the last 5 minutes of the boil. I have been sitting on the Zythos since last December so maybe that could be the reason but I haven't really like any of the hop blends that have came out in the last two years.

ATTENTION BEER NERD POST!!! A couple of months ago I wanted to brew a dark beer but with the heat of Texas a Russian imperial stout just doesn't sound that good so with that thought I brewed an American Dark Lager it is pretty much a Schwarz beer but the body is lightened up with some flaked maize. Also with the brew I had been reading Gordon Strong's book Brewing Better Beer. Gordon suggests there are no reason to mash dark grains that mashing them actually could add an astringency to the beer like a tea that has steeped to long or a pot of coffee that has sat on the burner to long. My first thought was your going to lose flavor and color as you can see the beer is very dark and the flavor comes through beautifully actually alot like Santo from St Arnolds. I used only carafa II for color and roast flavors and it was added at vorlauf at the end of the mash I am definitly going to give this technique a try with just regular crystal malts on another brew to see how it does but I think this is something that might improve anyone beer.

The two IPAs turned out great both coming in at about 1.065. Not much happened this weekend but plan on brewing an American Standard Lager and a Pilner that will be brewed with all American Hops. Still need to bottle beer entries for Dixie Cup which will include a Helles bock, American Dark Lager, Bohiemian Pilsner, and Dopplebock.

It's been awhile since the last update we are in the process of experimenting with lagers. Since the last update we have been working on recipes for several pilsner style beers. So far I think the favorites are the German Pilsner and the American Classic Pilsner. We are also working on a couple of dark beer recipes as well we brewed a schwarz and a American Dark Lager. Currently fermenting are a German pils, Munich Helles, and a Bohemian Pilsner.
