The Story of Itasca Brewing Company

Itasca Brewing Company was founded and incorporated by Michael Valente & Zachary Phillips in 2011 in the Chicago suburb of Itasca, Illinois.

Starting as college friends who took on the hobby of homebrewing at Western Carolina University, the pair grew their passion for brewing together. As they continued their college career, Michael and Zachary found themselves progressing past brewing in their home and started to work for a local nanobrewery headed by a German brewmaster within the Smokey Mountains.

Working for the brewery laid the foundation to what Michael and Zachary would build upon to create Itasca Brewing Company. After three years of gaining first-hand experience, the team decided to follow their dream and open up their own establishment. To grow his skillset even further, Michael enrolled in the Siebel Institute of Technology Brewing Academy in Chicago, Illinois and ventured overseas to attend the Doemens Brewing Academy in Munich, Germany. Upon completing his studies, he received an Associates & International Brewing diploma.

When it was finally time to start building the brewery, the small town of Itasca became the perfect location to plant their roots. The opportunity then arose to lease a space within the Itasca Country Club and the construction began shortly after. In addition to pursuing their dream of owning and operating their own brewery, the core goal for Michael and Zachary was to be a community stable and improve the quality of life for the town’s residents. In order to make this a reality, the hope was to collaborate with the Village of Itasca and local business owners to provide a gathering place that provides high-quality, handcrafted beverages using locally sourced ingredients.
