You really are missing out if Denver (Denver Jones) hasn’t made you a drink here at Berwick’s Bird of Paradise yet. And you’re doubly missing out if you haven’t posted up at our bar to ask him about his past life. We’ll tell you pieces of how he got here, but you’re gonna have to find out more.

Houston’s home for Denver, but it took a minute for him to return. He served in the Air Force, then lived in El Paso and Chicago before this city pulled him back. He found his way to us thanks to his shared friendship with Lainey Collum who originally introduced him to 🌊 robin berwick 🌊.

Denver has twenty years behind the bar and he still says the best part is the people because every shift brings a new face. Each person comes with a new story and more than a few that wildly defy explanation. The job’s never boring, and after two decades, that’s saying something.​​​​​​​​​​​​​

Next time you’re in, treat yourself to a tasty cocktail and he might even divulge in some of the craziest tales of all his time behind the bar.

Our shrimp toast is packed with New Orleans creole spices, that’s got extra crunch from a crust of black and white sesame seeds. When the sun goes low, come hang out on our patio for some bites and drinks this weekend. 🌭 Hot Dog Sundays of Summer have officially arrived! Every Sunday, our usual Classic Hot Dogs are $4 with any specialty drink purchase from 2-9pm. They’re made with hefty all-beef franks topped with ketchup, yellow mustard, house-made pickle relish, and green onions between a warm, toasted bun. You know when you just want a really solid ballpark hot dog without having to make a trek to the stadium? That’s exactly what we have on the menu and this special is here just in time to kick off Memorial Day Weekend!

Backstory time: is a Galveston born native who never really left the water and still just as obsessed with the sea, boats, and diving. Clearly that coastal pull never let go. She’ll tell you tropical is not just her design thing and convince you it’s in her DNA.

As a business owner having opened over fourteen years ago her as her first bar, weathering those COVID days, she was casually touring this block when two palm trees out front stopped her cold. This felt right.

If you know Robin, there’s one thing she never got to do: work a hotel bar. She always wanted one, just never wanted to run the actual hotel. So this is her own encapsulated version; a fictitious lobby bar and restaurant that was part of a wildly popular resort from the ‘70s. Maybe the hotel has since closed, but this part survived. And yeah, it might be a little haunted.

The drinks here are subtropical, not tiki. Think riffs on beachy classics, mixed with intention, and stocked with a few imported finds. There’s an entire food menu of casual snacks and substantial bites if you’ve worked up an appetite.

Oh, and we have a dream team to make y’all feel like you’re at a staycation where you’re never rushed. This place is basically like the chill, older sister to . If you haven’t had a chance to stop by we’d love to meet you in this lil slice of paradise.

This year’s Women’s History Month theme, “Leading the Change: Women Shaping a Sustainable Future,” expands sustainability beyond environmental concerns to include financial resilience, community strength, leadership succession, and intergenerational equity.

Women are designing the blueprints for this transformation. Our goal is to educate and connect women who are building bridges across generations, geographies, and disciplines; we’re fostering collaboration, mentorship, and shared learning in service of a future where women’s leadership is central to thriving communities.

Here at , is making ‘Robin’s Nest’ to celebrate this month. It’s made with Maker’s Mark, Montenegro, ginger, lemon, and Angostura, served up.

Kayla who is inspired by Robin says:
