Our next MESA collaboration dinner is almost two weeks away. Take a look at the six-course menu created in collaboration between Chef Christian Hernandez, Pastry Chef Priscilla Treviño, and our own Chef Luis Robledo Richards.

Barbacana, winner of Best New Restaurant and Best Dessert Program at the CultureMap 2026 Tastemaker Awards, brings a globally inspired, ingredient-driven style to the table. For this edition, Chef Hernandez and Chef Treviño join our kitchen not as guests but as collaborators, and the result is playful yet refined, unexpected yet grounded.

Our new Braised Carrot Flautas with Mole Almendrado and Cotija. Did you know that Mexican cuisine is very commonly vegetarian and even vegan friendly? Mexican cuisine has always had a strong vegetarian backbone. From complex moles to simple dishes centered around corn, beans and seasonal vegetables, it is a cuisine that naturally lends itself to plant forward cooking.

For one night only, we are welcoming Chef Christian Hernandez and Pastry Chef Priscilla Treviño of Barbacana to the Mayahuel kitchen.

Barbacana, fresh off winning Best New Restaurant and Best Dessert Program at the CultureMap Tastemaker Awards, joins us on May 27th from 6 to 10pm. Chef Hernandez and Chef Treviño will be collaborating with our own Chef Luis Robledo Richards to create a six-course tasting menu that brings together their globally inspired, ingredient-driven approach with Mayahuel's modern Mexican perspective.

Expect playful technique, vibrant flavors, and dishes designed to surprise.

Xochitl, the Nahuatl word for flower, is a name tied to beauty, fertility, and the sacred bloom of life. Just like its name, this cocktail is layered and alive.

One of our signature cocktails, it is made with a blend of tequila blanco, jalapeño peppers, ginger, cilantro, and lime. It's super refreshing and crisp, yet complex and multi-dimensional.
