The name Camerata was taken from Florentine Camerata, a group of artists, musicians, intellectuals in Renaissance Florence, Italy. The term camerata means literally room or chamber where gatherings are held. Owner Paul Petronella was inspired by this term because of his Italian heritage and desire to create an unpretentious meeting place where guests can enjoy delicious beverages and thoughtful ba

r food. Camerata also strives to be a place of learning, be it wine, literature or history. Camerata is open daily from 4 p.m. – 2 a.m. and sells bottles at retail. The food menu consists of fine salumi, artisanal cheeses and thoughtful bar food options. A Tasting Class on Food & Wine Pairing:

Two Seatings Available:

The tasting will include nine different wine selections, a small charcuterie and cheese board and interesting bites to accompany each wine. The line up includes three sparkling wines (two of which are Champagnes), Château Cibon Vintage Rosé, a side by side of Vintage D'Oliveiras Madeira, and a flight of Gran Barquero Sherry wines that will conclude with a hands-on lesson of how to make your own Cream Sherry (Fun Fact: there is no cream involved!). 

Alongside each wine will be a small bite that showcases the classic concepts of food and wine pairing, and...a few not so classic pairings. GM/Certified Sommelier and former Chef, Elyse Wilson will be guiding the tasting by discussing the foundations of how flavors can positively compliment, as well as contrast with different wines. She will also dive into the more famously known wine and food pairings of the world and highlight which foods are known to battle wines on the palate. You can expect to leave the event with the confidence and inspiration that will delight yourself and others in the future with this new found skill.

Camerata Flight Night - Featuring Women Winemakers of the Southern Hemisphere!

Come by anytime from 4pm to close to check out some outstanding wines from the not-so-well-known areas of the world.

Vasse Felix wines, made by Virginia Wilcox, are wines that put the Wild West of Australia on the map! Vasse Felix is considered the founding winery of the Margaret River area of Western Australia. Her sleek and balanced wines are showstoppers!

Catena Zapata wines, made by Laura Cantena and her team, highlight the quality and finesse that Argentinian wines can express. Laura is a Harvard & Stanford graduate physician and author who now dabbles in winemaking as a fourth generation family member of the winery.

Mullineux wines, made by Andrea Mullineux and her husband Chris, is one of Swartland, South Africa’s most celebrated wineries. She was named Wine Enthusiast’s Winemaker of the Year in 2016 and hasn’t lost a beat since.

We will offer a flight of three from each producer as well as a flight of wines that include one of each producer. Additionally, all of the wines will be available by the glass for the evening and we will have special guest Anna Beagley, who represents the portfolios, on premise to discuss the wines with you!

Sparkling Junmai Daiginjo…Oh My!

This 375mL bottle of joy will entice your palate with notes of crisp pear, white flowers, and a touch of mint and anise.

Uka is the Japanese word for emergence, and it was chosen as the brand’s name for the symbolism it embodies on several levels. Uka sake is a renewal of continuing the Koda Farms’ founder’s passion for seeking ways to increase ties and foster relationships between the USA and Japan.

This super unique Sake uses organic rice grown in California’s San Joaquin Valley but than the sake is brewed near the Koda family’s ancestral home in Fukushima, Japan. The rice farm was started in 1928 and now has a 90+ year history of growing quality rice in America. In fact, their rice breeder actually created a uniquely shaped medium grain Japonica rice variety now known as KR55.

On the label, the lower wings of Uka’s butterfly are stylized maps of California and Fukushima, signaling a new relationship established between the family of a California rice farm and a centuries-old brewer’s family in Japan.

We are excited to introduce Jeff Carrel’s “Mad” idea - Camerata’s first ever “carbonated” wine…Mousse-Tache!

Carbonated wines have historically been scoffed at, and for mostly good reason…but in the world of wine there is always someone innovating and improving on the existing methods. Jeff Carrel, a French wine-maker working out of the Pyrénées-Orientales of Southeast France has broken the bonds of familiar with an excellent representation how exciting wines which are created in new ways can take center stage when done right. His contemporary method of making higher quality carbon-dioxide infused wines in quite impressive.

Mousse-tache is 100% Chenin Blanc that has been aged on its lees in tanks and then during bottling, carbonic gas (carbon dioxide) is introduced into the wine through an extremely fine membrane (which lends to very small bubbles and creates a similar fine-texture to that of traditional method). It is then slowly infused until it has the same pressure as traditional method sparkling wines so the fizzle has longevity and has a more refined performance on the palate in comparison to previously existing carbonated wines.

This sparkling wine is has a sincere zesty quality on the nose and showcases intense floral flavors with a rounder body. It tastes of pound cake without being sweet but finishes with a crisp backbone to support its expressive nature.

Join us for the Annual Camerata Holiday Retail Sale on Sunday, November 20th from 12pm to 4pm.

Thanksgiving Wine & Holiday Gifts At Your Fingertips!

We will have 50 wines coming from 10 local distributors for you to sample for free! Purchases made from vendors will be available for pick-up starting the following day, Monday the 21st.

Like last year, the event will be held outside in the Paulie's parking lot. Each distributor will have a tent set up for you to peruse their wines. The event will be rain or shine (Almost every year the weather has been great!). 

We will also be offering the sale online via the Camerata Online Marketplace if you cannot attend in person. These deals will be available on our marketplace starting the morning of the 20th at 10am until 6pm. To access the online marketplace a link will be available via Instagram on November 20th. There will also be a link on our website.

We want to thank everyone for their continued support throughout the years that we have hosted our Annual Retail Sale. We feel blessed to serve the community and look forward to seeing you all on Sunday, November 20th!

Taking Candy From Strangers can be fun when wine is involved!

Happy Halloween! From Thursday the 27th through Monday the 31st Camerata will be offering a flight of four wines, each paired with a different chocolate from local Houston Chocolatier Dany Kamkhagi of Mostly Chocolates. The pairing will be offered from 4pm til Close each day and no reservations are required!

A couple of tips for wine and chocolate pairing…

- Silky & Velvety Tannins Pair Best:
Red wine and chocolate can both have intense, dry flavors. Powerful red wine that's high in tannins paired with dark chocolate can be overwhelming on the palate. Balance them out with wines that are a little bit softer and juicier then the chocolate you're pairing it with.

- Match The Intensities:
When in doubt, pair chocolates and wines that have a similar style and weight. Less intensely-flavored chocolates go well with lighter-bodied wines, while chocolates with more intense flavors can stand up to fuller-bodied wines.

- Taste Light to Dark:
It is best to start with light chocolates and wines, increasing the intensity as you move along. Start with white chocolates and light wines and save the richest, dark chocolates and wines for last.

- Pair According To The Accoutrements:
What other ingredients are in the chocolate? Nuts? Fruit? Caramel? Consider how these flavors will play with the wine. For example, a chocolate studded with dried cranberries might pair well with a fruit-forward red with berry undertones.

- MOST IMPORTANTLY: Know The Sweetest Thing:
For chocolate and dessert pairings alike, the wine should be sweeter than the chocolate itself. When a chocolate or dessert is sweeter than the wine, the pairing can be less enjoyable as the wine might seem flabby or lackluster on the palate.

Corton, the northern-most appellation of the Côte de Beaune, is also the largest Grand Cru in Burgundy. Known for producing some of the biggest reds in Burgundy, these Pinot Noir’s have grip, depth, tannin, and longevity while still showcasing finesse and grace.

Domaine Comte Senard started in 1857 when Jules Senard, the great
grandfather of Philippe Senard (he passed in 2021), planted the Corton-Clos des Meix monopole. The monopole later became a Grand Cru
vineyard when the AOC was created in 1937. The wines, which are intensely sought after, are handled carefully with restrained oak, and aged in cellars constructed in the 14th century by Benedictine monks.

The Domaine has been passed down for 5 generations and since 2005 has been under the management of Lorraine Senard (Philippe’s daughter), one of a small but growing number of female vignerons in the Côte d’Or.

The “Corton Clos des Meix” is a 2.5 hectares monopole. There are a very small amount of Grand Cru monopoles in Burgundy, so this is quite a special bottle. On average, only 333 cases of Corton Clos des Meix are produced a year and this wine is considered the most pleasant of all the Cortons when drank young, but it can also age for 20 years.

For a more affordable option from Comte Senard, we are also featuring their Chorey-Les-Beaune. This is a small appellation around the tiny village of Chorey, at the foot of the hill of Corton. This wine sees 14 months in oak barrels, of which 50% of is New Oak.

Additionally, check out the Volnay Premier Cru Domaine Georges Glantenay. Founded in 1893 by Pierre Glantenay it is still managed by the 4th generation Guillaume and Sarah Glantenay. There are just 8 hectares of vines, farmed with sustainable agriculture, with the greatest respect for the terroir. This Premier Cru Pinot Noir is sourced from 60+ year-old vines and aged in French oak barrels, 20% New Oak.

There is limited quantity of these fantastic wines, so stop by and see what all the fuss is about!

If you haven’t had the pleasure of Scotty serving you before, you are missing out on an experience of genuine hospitality. This past year he has been a shining star here at Camerata. I feel honored to call Scotty a wine-tender, friend, colleague and positive influence in the bar. He is one of the most humble and authentic people I know.

He is taking his Level One Sommelier exam next month and on to his Certified next year, so come by and support him and quiz him!

Please join Advanced Sake Professional/Camerata GM Elyse Wilson and her team for an Evening of Namazake. These are particularly special Sakes that are released each spring and are meant to be drank before the Spring of the following year. This unique style presents bright, zippy and vivacious textures on the tongue as well as vibrant fruit-forward flavors. They are always served chilled and are a great introduction for novices who are intrigued by Sake as well as delightful treats for Sake enthusiasts! 

There will be several exciting options but the feature of the night will be three of the Takachiyo Chapter 10 series Namas which come from the Niigata prefecture in northern Japan. The Takachiyo Namas are extremely rare and extremely sought after Namazakes that focus on single rice varietal strains; a very uncommon practice among Sake producers. Only a few cases of each make it to Texas every year!

There are no tickets required. 

In addition to several other Namezakes we will feature by the glass the Takachiyos will be offered as a flight, and there will be a few Japanese-inspired snacks as well! 

The Takachiyo flight of three will be $28 - this is a spectacular offer as they are not usually available by the glass or at such an amazing price, so truly don't miss out!
