The origins of our Beef Carpaccio come from an authentic Vietnamese dish called Bo Tai Chanh where it's typically prepared as raw beef that's cooked in lime juice and served with herbs and nuts. For those unfamiliar with our Vietnamese language, a dish's name is oftentimes a direct translation of what it is. And in this case, Bo Tai Chanh literally means "rare beef lemon" in English.⠀

Our version is lightly-seared ribeye topped with fresh Vietnamese herbs, Thai chilies, corn nuts, roasted peanuts, and fried shallots served with a citrusy soy vinaigrette and crunchy prawn chips. This one's fun and refreshing to eat and great to share with good company!⠀
