So it occured to me that only a handful of people realize we make a pretty tasty Cuban sandwich on Sundays. (Sorry only Sundays). And it’s a hefty boy. I could eat like one of these and hibernate like a bear.

Anyway this post is ostensibly about a delicious pork sandwich but then it unlocked a cascade of anxiety. Like initially I was thinking “oh I haven’t posted food in a while. Just drinks.” But know I realize that this means three posts in a row with the same background. I think that’s bad. Like we’re supposed to switch it up or something. Oh no terrible at social media.

Anyway I love being alive because I can have drinks and eat sandwiches and experience anxiety.

Ok so it’s a bit cloudy today, but it turns out it’s the perfect type of weather to talk about Sabrina’s new English Gin & Tonic.

We were really excited to see the Cotswolds Distillery hit Texas this year so we could get our hands not only on their English single malt whiskies, but this massive English Dry Gin as well. They pack this gin full of tons of English botanicals, notably a healthy dose of lavender and then opt not to use chill filtration, leaving all those beautiful essential oils carried over from distillation in the gin, which, when you dilute with it tonic water actually clouds up a bit because those oils can’t stay dissolved in water. It’s a really cool way to see your English gin and tonic come to life.

And additional little bit of fun is that this particular gin and tonic recipe created by Sabrina was selected as the personal favorite of the Cotswolds Distillery’s commercial director when she visited us earlier this month. So we’re featuring it all summer.

With a sturdy base of Cotswolds Dry Gin, it gets a little English boost with our lime cordial and an earl grey tincture, along with a lavender spritz and sage. Plus the tonic of course.

Nearly ten years ago we started converting a whole lot of yall in Clear Lake to the joys of gin. But even after all that time we’ve learned that with gin the road goes on forever and the party never ends.

Hi there, Clear Lake friends.

We’d like to ask for your help for someone who deserves all the love and financial support we can muster.

Many of us are lucky enough to know her, but for those of you who don’t, Sally Norsworthy has been a fixture of Clear Lake’s bar scene for as long as we can remember. She’s been at Molly’s Pub for as long as I could legally drink, which was pretty much always there before opening up this place. And it feels like a fated tragedy that we might lose Sally so soon after we lost Molly’s Pub itself.

It would be easy to tuck into a few drinks and write 20 paragraphs about how important Sally is to this little community of Clear Lake, how deservedly loved she is by so many people, and how lucky we’ve been to know her. But what matters most now is that we rally as a community to help her as she nears the end of her fight with cancer.

If you can go to the Cellar on Sunday for her fundraiser or just donate to our friend Nicole directly, we would be grateful for as much support as is possible.

Clear Lake,

We have an Appletini.

We’ve toyed with the idea for a while, and when we remembered that we’ve had a centrifuge languishing unopened for like two years, Sabrina poured herself into it, agonizing over the blend of acids for her clarified Granny Smith cordial and the spirits involved. We wanted something with no cheap or unnatural flavors that still captures the silly fun of the 90s classic. And now it’s finally here.

Not sure if 90s throwback is cool or whatever but this thing is fun as hell.

We love it when one of our private barrels arrives. And we particularly love Wild Turkey. So today is a pretty good late...

We love it when one of our private barrels arrives. And we particularly love Wild Turkey. So today is a pretty good late Christmas kinda day.

Our new Russell’s Reserve barrel spent nearly 9 years in the center of Wild Turkey’s Camp Nelson D rickhouse before it made its way to our backbar.

It’s got lots of cinnamon, nougat, dusty oak, and cherry pie, along with a bit of orange peel.

And like all Russell’s barrels it drinks at a healthy 110 proof. Strong enough to rescue you from your troubles but still easy going. Like Kevin Costner in The Bodyguard.

Closed today. Eating buffalo flavored stuff and figuring out the best lie to tell my doctor at my next physical.
