Welcome to Tsukada Nojo Hawaii, a new artisanal noodle, nabe and small plate concept from Japan. We have brought and replicated our unique and modern Japanese recipes, such as our signature small bites, to complement our elaborately created Ramen selection. A deliberate departure from the more familiar Tonkotsu (pork) broth, Tsukada Nojo offers a deep and rich Chicken Paitan broth as the base for our Ramen, paired with thick and savory noodles tailored specifically to match our Paitan broth. Working closely with farmers across the Hawaiian Islands to source as many local ingredients. We pride ourselves on the freshness of our foods and curating them from the bounty these islands offer. We entice you to enjoy many of our sophisticated izakaya favorites, developed at our sister restaurants in Japan, here at our first Hawaii location.
