We’re incredibly grateful for the memories made during our recent trip to New Orleans. It was an honor to share our wines at dinner events with Desi Vega's Steakhouse - New Orleans and Ye Olde College Inn, as well as tastings with Southern Yacht Club and New Orleans Wine & Food Experience.

Thank you to the chefs, partners, and guests who joined us throughout the week. We always enjoy bringing a taste of Knights Valley beyond Sonoma County, but it's the connections along the way that make these experiences truly memorable.

At Ehret, we believe bigger isn't always better.
Each year, we produce one small batch of estate extra virgin olive oil — fewer than 150 bottles in our latest harvest. Our grove brings together seven varietals: Arbequina, Frantoio, Koroneiki, Leccino, Manzanillo, Mission, and Pendolino. Planted side by side, these trees do more than create a layered, complex blend — they cross-pollinate, strengthening the health and yield of the entire grove.
That care shows. Our 2025 EVOO vintage was just awarded Double Gold at the recent Sonoma County Harvest Fair Olive Oil Competition!
Every olive is grown on our Estate and custom crushed at Fi**ne in Sonoma — never blended with outside fruit. From tree to bottle, you know exactly where your oil comes from and how it was farmed. That kind of traceability is rare in olive oil, and it's the difference you can taste.

This month, Alex pairs Eisbär by Grauzone, a post-punk band from Bern, Switzerland, with our 2023 Hillside Reserve Cabernet Sauvignon. The bass in Eisbär is heavy and relentless. Oxford University's Crossmodal Research Laboratory confirms that low-frequency sound amplifies body, tannin, and dark fruit in the glass. This record does exactly that.

In January 2026, Christian Ehret traveled to eastern Spain to attend the Micolab truffle-growing masterclass hosted by Luz Cocina Romero. The program offered an immersive, hands-on experience focused on the cultivation and management of black truffles — from orchard establishment and irrigation strategies to soil management, truffle dog training, and long-term orchard development.

The journey took us from Valencia into Teruel, located in northeastern Spain and widely regarded as the truffle capital of the country, producing nearly 70% of Spain’s black truffles. Throughout the course, we visited orchards of different ages and farming styles, gaining firsthand insight into the diverse approaches growers use across the region.

Beyond the technical knowledge, the experience also highlighted the deep cultural connection between truffles, agriculture, and cuisine through unforgettable truffle-focused meals shared along the way.

We returned home with invaluable knowledge and practical experience that we look forward to applying at our own Bavarian Lion Truffle Orchard. A huge thank you to Luz and the entire Micolab team for the incredible hospitality and unforgettable experience.

What you hear changes what you taste. Not as a metaphor. Literally.

Research from Oxford University's Crossmodal Research Laboratory confirms that music directly alters how we perceive wine. The acidity, the fruitiness, the finish, the sweetness. All of it shifts depending on what's playing. Bold, low-frequency music amplifies the power of a Cabernet. Bright, high-pitched tones pull the citrus and stonefruit forward in a Sauvignon Blanc. Slower tempo measurably lengthens the finish.

Starting this month, we're putting that to work. Wax & Wine is a monthly series pairing each EHRET wine with a vinyl record. We'll tell you what they share and why they belong together.
