Working in a Pennsylvania brewery has its disadvantages. Due to the state liquor laws, one with a brewer's license may only sell spirits from the state they are operating in. However, this is where I was introduced to Maggie's Farm Rum and Dad's Hat Rye, two outstanding products from either side of PA ( Maggie's Farm from Pittsburgh and Dad's Hat from Bristol). Maggie's Farm does Rum in a variety of flavors and styles and are all standup guys over there. Dad's Hat, was one of the first PA Rye Whiskeys I ever tried, and I was instantly hooked. Today we combine a limited release Maggie's Farm COFFEE MINT Rum and the classic Dad's Hat Rye to bring you a cold weather sipper that is easy on the taste buds. ENJOY !

2 oz. Dad's Hat Rye75 oz Maggie's Farm Mint Coffee Rum25 oz Maple25 oz Orgeat Syrup
4 dashes Peychaud's Bitters

In my usual fashion I procrastinated and didn't get my Valentines video out in time. On that note....hope you all enjoyed the holiday of love. I put together a easy sipping treat for the sweet day for sweethearts. Cherry, Vanilla, Almond and lime get a pillowy boost of softness with the addition of egg whites and a dash of heavy cream. To complete this demure delicacy with top it off with some bubbly Prosecco and cheers, there you have it. Love ya.

Loving Hearts
1.5 oz Vodka (I used Stateside Vodka)25 oz Amaretto ( i used Di Vinci,)
3/4 oz. Cherry Vanilla syrup
1 egg white5 oz Heavy Cream
Topped with Prosecco

Cherry Vanilla Syrup
1 cup water
1.5 cups of sliced cherries
1.5 cups sugar15 teaspoon Vanilla

Boil water with cherries and sugar.
Remove from heat and add vanilla. Let cool and strain.

The Whiskey Sour is a classic for a reason. The balance of sweet and tangy coupled with your whiskey of choice has stood the test of time and is now enjoyed by those aging imbibers as well as the 20 somethings of today. Today I “Spiced” things up with some smoke and heat by introducing a Lapsang Souchong (AKA “Smoke Tea”) syrup to the recipe and some super spicy Bitters. The “bitters” can be as simple as soaking a variety of hot peppers in grain alcohol for a few weeks, you only need a few drops to amp things up. The tea syrup recipe is below.

SMOKE TEA SYRUP
¼ cup of fresh smoke tea
2 cups of water
¾ cup of Brown Sugar
Boil water, remove from heat and add tea leaves. Let Soak for about 20 minutes and strain. Stir in sugar until it dissolves.

Brimstone Sour
2 oz Whiskey of Choice (Kinsey)
¾ oz Lemon
1 oz Smoke Tea syrup
4 dashes Brimstone Bitters
Garnish with Lemon wheel and Cherry

Winter wants me to enjoy Whiskey and dark beers. So I got a little weird and tried to combine the two. Who knew a stout could jive so well in a cocktail ? Me....thats who...bwhahaha 🤣
Any who, here in PA we have lots of options as far as local stouts to work with so I opted for one of my favorites, Lancaster Brewing Company's Milk Stout. Yum. Basically use the beer as a float atop of the cocktail not to dilute the texture and your all set.

2 oz Bourbon
1 oz dark Creme de Cacao
1/2 oz brown sugar syrup
Muddled Mint
Topped with LBC Milk Stout
Garnish with Mint leaf

I was checking out the local PA selection of Vodkas and came across Lititz Springs from Stoll and Wolfe Distillery. This is an uber smooth vodka that I've personally used in place of Goose and Ketal and customers have been pleasantly surprised by how well it is crafted. Always one for supporting local i grabbed a bottle and went to work on creating a elevated Vodka tonic with a vanilla pear syrup and lime. Came out pretty good, even though i made a mess :-)

Quite a Pear
2 oz. Vodka ( Lititz Springs )
1 oz. Vanilla Pear syrup
3/4 oz Lime
4 Dashes Creole Bitters (Peychaud's)
Topped with Fever Tree Tonic Water

Vanilla Pear Syrup
1.5 cups of diced Pears
1 cup Sugar
1 cup Water5 teaspoon of Vanilla
Bring all ingredients to a boil and simmer for 5 minutes. Remove from heat, add vanilla and let seep till cool.

The "Paper Plane" was a cocktail I enjoyed making for customers because of the great flavors and the unique nature of the drink. Ever since I became familiar with this concoction i was interested in doing a variation of my own, so here we go. To make it my own I decided to add a little smoke using my FOGHAT cocktail smoker as well as swap out Amaro or the Maraschino and the result was pretty tasty. I may have gone a little light on the pours in the video, I might have enjoyed some whiskey beforehand. Cheers!

1 oz Bourbon
1 oz Aperol
1 oz maraschino
3/4 oz Lemon Juice
Smoked Glass using my FOGHAT SMOKER.

This handsome fella is a twist on a gin sour with the additions of herbal liqueur and homemade spicy bitters. It's a bit labor intensive, as it is with any drink including egg whites, but it's worth the wait when all the flavors are dancing on your palate. If you don't want to fool around making your own spicy bitters, you can find some at Kegworks.com.

2 Gin
1 oz Aperol or Campari for a little less sweet
1 oz Lemon
1 oz Sugar
1 egg white or aquafaba
2 dashes Thai Chili Bitters

Add all ingredients together in your tin and dry shake the Sh*t out of it (Shake with no ice), first to fluff it up, then add ice to chill and dilute it a bit. Cheers !!

Getting a little over excited for dessert cocktails today. Its getting cold out so i figured its time to break out some decadent flavors to warm the soul. I came across an article about bartenders utilizing different cheeses to amplify flavor profiles and textures so I decided to try my hand at it using creme cheese with a home made fall syrup. Recipes are below, CHEERS!

2 oz Rye Whiskey (George Dickel Rye)
1.5 oz Fall Simple Syrup
4 Dashes Aromatic bitters
Stir and Pour

FALL SYRUP
1 cup boiling water
1 cup brown sugar
1 star anise pod
4 inch Ginger nub sliced
3 cinnamon sticks
1/2 vanilla bean
big pinch of Allspice
big pinch of Clove
Let seep in boiling water till cool and strain.

CREAM CHEESE MIX
3 oz softened cream cheese
2 oz Fresh OJ
2 oz Heavy cream
2 oz Honey
Combine ingredients and blend with Immersion blender. Blend until whipped and top cocktail with mixture.

The "In a pickle" cocktail was a personal milestone for me. I wanted a pickle flavored cocktail without introducing actual pickle brine. Had to R&D this for weeks with hot garbage results, i just couldn't get the ingredients to line up. Eventually the hard work paid off and this little gem was born. The missing piece was the "Garden" bitters which added a sweet, herbal tang made from pickling spice and garlic.

In a Pickle
2 oz BlueCoat Gin,
4 Cucumber slices (muddled)
3 Dill Sprigs (muddled)
¼ oz Lime,
¾ oz Ginger Syrup,
3 dashes Sweet Garden Bitters

I'm starting the Autumn season off with a delicous whiskey apple cocktail. You can whip this up on the rocks or up, but for this video we're going classy, martini style. Don't forget to really muddle those apples, get as much juice as you can. CHEERS !

Muddle Apple slices
2 oz Irish Whiskey
1 oz Laird Applejack
1/2 oz lemon juice
3/4 oz Brown sugar honey syrup
Top with Ginger Ale (Canada Dry or something local)
