The many faces of Todd Tuesday:

Let’s call this my “chilled” face.

We chilled a bottle of Parajes del Valle Monastrell, a fresh, organic red wine from Jumilla, Spain. If you’re not familiar with fresh wines, they are generally more vibrant red (or white) wines with fresh floral notes, and bright acidity. This is usually achieved through early harvesting and aging in concrete or stainless steel tanks to preserve freshness. This wine is made from the Monastrell grape (Mourvèdre) and would be versatile with food, pairing well with everything from tapas and barbecue to richer meats like lamb. I happen to appreciate them served slightly chilled as it rounds out the edges. This wine doesn’t only pair well with food, it pairs really well with hot weather, or the pool.
