Our Miso Glazed Pork Chop brings together sweet, savory, bright and just the right amount of heat with grilled cabbage, peak-season nectarine, chili crisp and pickled sunchoke. Perfectly paired with Greer Cabernet Sauvignon.

And in the glass? Greer 2019 Cabernet Sauvignon. This 100% estate-grown Napa Valley Cabernet is rich and beautifully structured, with layers of blackcurrant, crĆØme de cassis, toasted spice and cedar, balanced by ripe tannins and a long, elegant finish.

For the optional wine pairing, our Sommelier, Marc, selected the 2023 Baron de Ladoucette Pouilly-FumĆ© from Franceā€™s Loire Valley. Made from 100% Sauvignon Blanc, its vibrant citrus, crisp green apple and white florals are balanced by the flinty minerality and brisk acidity characteristic of Pouilly-FumĆ©. A beautiful complement to the freshness of the hamachi, fruit and ponzu.
